The chill of Autumn is poking its head into the late-Summer mornings and evenings, so we divert our attention away from the chilled and carefree side of our wine selection toward something focused and complex.
Scala vigneti e cantina Cirò Rosso Classico Superiore is this week’s wine feature, and it truly is delightful. Made with a single grape varietal (Gaglioppo), aged in concrete vessels for clarity of purpose, this wine begs to have its most minute details considered (similarly to how we felt compelled to document the bottle and labels for this post) and to notice how it complements the details of food pairings: the most obvious of which, in our minds, would be the smoky, garlic and black pepper seasoned bite of our Smoked Bison Pastrami.

This 2022 vintage offers a compelling, food-friendly expression of southern Italy that pairs effortlessly with smoky meats, charcuterie, and tomato-based dishes.
