We change our fish daily based on what the fleet brings in. Tilefish. Cobia. Flounder. Sheepshead. Red drum. Snapper.

We go to great lengths for this. A staff member drives to Wanchese two, three times a week to select fish right off the boats. We bring it back to our kitchen where one person's entire job is cutting and processing—nothing else. It's not easy. It's not inexpensive. But it's the only way we operate. That's why dinner is as pristine and delicious as it gets on the Outer Banks.

When Carolista Baum learned developers planned to build a subdivision on Jockey's Ridge, she organized, and as a result the State of North Carolina bought the land in 1973. The tallest living sand dune on the East Coast is a state park today because she wouldn't let it become a cul-de-sac. Can you imagine our Outer Banks without this landmark?
