Three years.
This year, our anniversary feels a little quieter.
There won’t be a big celebration or a lot of fanfare. But three years is still three years, and that is absolutely something worth pausing to recognize.
When we opened The V three years ago, we had a dream.
A dream to share the food we grew up with.
A dream to tell our story through food.
A dream to build something of our own in a little Wyoming town we had come to call home.
And if we are being completely honest… this past year has been the hardest one yet.
There have been more changes, more uncertainty, more hard decisions, and more moments when we had to ask ourselves what came next.
Starting over is never easy. Especially when you have poured so much of yourself into a place.
But we never gave up on the dream.
We packed it up, carried it forward, and opened another door.
And somehow, here we are.
Three years later.
Still cooking.
Still learning.
Still growing.
Still telling our Vietnamese American food story.
There is something special about surviving three years as a restaurant. And doing it here in Dubois makes it even more meaningful.
We live in a small, seasonal, tourist town where businesses have to work incredibly hard to make it through the slow months and find their place year after year. So making it to three years feels less like a milestone we accomplished on our own and more like something we accomplished together- with the people who have supported us along the way.
And we are incredibly proud of what The V has become...
Proud to be a Vietnamese restaurant in Wyoming.
Proud to be one of only two Vietnamese restaurants in the entire state.
And incredibly honored that we get to do it right here in Dubois.
Three years ago, we didn't know exactly where this journey would take us.
We still don't.
But we know this much:
We aren't done.
Thank you to everyone who has walked through our doors, shared a meal with us, told someone about us, brought family and friends, encouraged us through the hard days, celebrated the good ones, and continued to believe in what we are building.
Three years in.
A new home.
A new chapter.
Same dream.
And still so much more to come.
With gratitude,
