Years ago, I used to look at the BIG food trucks and wonder if Shay’s Seafood & Soul would ever get there.
This past weekend, we pulled up to the Delaware Seafood Festival surrounded by some serious food truck brands—including Cousins Maine Lobster, a name many people remember from Shark Tank.
And somewhere in the middle of the day, it hit me:
We’re here.
We may not have the biggest truck. We don’t have a huge crew. Most days, Shay’s Seafood & Soul is a self-contained, two-person operation.
But we can move with the best of them.
Long lines. Short waits. Food cooked fresh to order. Great customer service. And customers taking the time to come back and tell us how much they enjoyed their food.
THAT is what I’m proud of.
I’ve worked incredibly hard behind the scenes to get our processes down almost to a science—from prep, to cooking, to taking orders, to getting food into our customers’ hands as quickly as possible without sacrificing quality.
And hearing people compliment not only the food, but the service means more to me than they probably realize.
This weekend reminded me how far Shay’s Seafood & Soul has come.
There was a time when being surrounded by trucks this big would have intimidated me.
Now?
I know we belong in the lineup.
We may be small, but we move BIG. 💪🏾
And we’re just getting started.
