BIG THINGS ARE HAPPENING IN MILO. 🥃🌲
What started as an idea, a few sketches, and probably more than a few “Are we really doing this?” conversations is getting very real, very fast.
Tomorrow, our new still and vats arrive. 🥃
In just a couple of days, we’ll begin construction on the new IdleWild Wh***ey Company Barrel House. And within the next month, our wh***ey barrels will begin making their way home to Milo, Maine.
Yeah… things are looking up.
There’s a whole new energy around IdleWild right now. Everything feels new, fresh, exciting—and finally tangible. The equipment is arriving. The ground is being cleared. The Barrel House is about to go up. And soon, barrels of wh***ey will be resting right here in the Maine woods.
Our new 30' × 30' Barrel House will have room for up to 144 barrels, quietly aging while Maine’s changing seasons and a little patience do their work.
This is about more than putting up another building.
It’s about building something here. Creating something in Milo that we can be proud of. Bringing the barrels home. Building a wh***ey company rooted in family, Maine, and the belief that sometimes the best things happen when you slow things down and give them time.
Tomorrow, the still arrives.
Construction begins in days.
The barrels come home within weeks.
And IdleWild Wh***ey Company comes to life.
Damn, this is getting exciting. 🥃

🍕 PAT’S IS BACK — WE’RE OPEN FOR BUSINESS! 🍻
Three days. A whole lot of work. Not nearly enough sleep. And probably a few moments where we wondered what the hell we got ourselves into. 😂
But we did it — and we couldn’t be happier with how Pat’s came out!
We cleaned, painted, refinished, remodeled, repaired and gave the old girl a little love from one end to the other. And after three absolutely brutal days, the doors are OPEN and Pat’s Pizza is back in business!
A HUGE thank you to everyone who rolled up their sleeves and helped us pull this off. There were a lot of hands involved in getting this place ready, and we truly appreciate every single one of you.
Now enough remodeling… it’s time to make some pizza, pour some drinks and get back to what we do best. 🍕🍺🥃

🥃🔥 PENELOPE IS BACK IN THE HOUSE AT PAT’S! 🔥🥃

Apparently one Wh***ey Wednesday with Penelope wasn't enough.

We agree. 😂

And this time we're not messing around with the everyday stuff. We've got TWO seriously special Penelope expressions on the bar.

Penelope has a pretty cool origin story. The brand started in 2018 after founder Mike Paladini and his wife learned they were expecting their daughter, Penelope. Mike teamed up with childhood friend Danny Polise, and what began as an idea between friends became a wh***ey brand now sold across the country. Today, Penelope wh***ey is distilled at the historic Ross & Squibb Distillery in Lawrenceburg, Indiana, with Penelope putting its own stamp on the wh***ey through blending, barrel selection and some seriously creative finishing.

And creative is DEFINITELY the word for Wednesday's lineup.

🏆 PENELOPE ESTATE COLLECTION — 10 YEAR SINGLE BARREL

Ten years in the barrel.

TEN. YEARS.

Some of us can't keep leftovers in the refrigerator for three days. These guys waited a decade. 😂

Penelope's Estate Collection Single Barrel program takes select barrels after 10 years of aging, allowing each individual barrel to show off its own personality rather than disappearing into a larger blend.

This is the sophisticated one.

Rich. Mature. Oak-driven. Big caramel and vanilla character with fruit, spice and that beautiful long-aged bourbon depth.

Basically, if bourbon wore a sport coat to Pat's Pizza, this would be it. 🥃😂

🌴🍯 PENELOPE RIO — COOPER SERIES

And then there's RIO.

This bottle apparently looked at normal barrel finishing and said:

“Nah. Let's get weird.” 😂

Rio starts as straight bourbon and gets a DOUBLE CASK FINISH — first in American honey barrels and then in new Brazilian Amburana oak. Penelope describes vanilla, toffee, graham cracker and floral honey on the nose, followed by honey, cinnamon sugar, vanilla and baking spices, with toasted oak and honeyed pastry hanging around on the finish.

Penelope calls it “a carnival in a bottle.”

We're not arguing.

This thing is sweet, spicy, exotic and completely different from the 10-year Estate Collection.

And THAT is exactly why we're pouring them together.
