I’ve been experimenting a lot with breakfast lately.
Today I had carrot bacon, just eggs with spinach & mushrooms, and hash browns 🌱
I’m still working on mastering my carrot bacon recipe but for only my second time making it I must say it’s very delicious 😋

My favorite Vegan, Plant based & Vegetarian meals!
On the menu this week:
• Vegetable & quinoa stuffed bell peppers.
Including mushrooms, spinach, onions, zucchini & squash.
•Vegetable enchiladas served with brown rice.
Including Broccoli, Cauliflower, carrots and spinach and homemade enchilada sauce
•Crispy potato taco bowls:
Including homemade pico de gallo , black beans, brown rice & my signature southwest dressing made with soy free veganaise 🌱

• Ground Turkey stuffed bell peppers (1 side)

• Sweet mash
• Roasted red potatoes
• Signature brown rice

• Baked vegetable medley
• Sautéed zucchini & squash
• Garlic roasted green beans

Roasted potatoes & mixed veggie pot pie! This right here is a staple in my house my 1yo loves this ❤️
Same recipe for your standard “Chicken pot pie” recipe: Follow me ⬇️
* Start by peeling, cleaning, seasoning and roasting your potatoes in the oven.
* Roll out and bake your bottom pie crust ( I used store bought)
* Steam your veggie in the microwave
* In a pan make a roux using olive oil and flour
* Add a can of *cream of mushroom ( to make vegetarian, for a vegan substitute you can buy or make vegan cream of mushroom or chicken)
* SEASON I used, Turmeric (color), Tarragon, Nutritional yeast, Paprika, Garlic powder, Onion powder, Adobo, Thyme, Herbes de Provence ✨✨
Seasoning is the 🔑 to make Vegan and Vegetarian dishes taste just as good or better then traditional dishes made with meat.
* After you have a delicious soup/ sauce add your veggie & potatoes
* Fill your pie crust
* Top with other pie crust and bake until golden brown!

This is Unique’s driest post of 2020 so let’s get it poppin’ with..
My interpretation on Shrimp & Grits:
Grilled buttery veggies on top of creamy delicious grits Follow me recipe below: ⬇️⬇️⬇️
I started with grits added a little almond milk (unsweetened, unflavored) for that creamy texture.
Then,, to a pan added butter and started to build my veggies I used
Carrots
Onions
Garlic
Bell peppers (orange, red, yellow)
Mushrooms
Kale
Grape tomatoes
In that order;
Added a little more butter and seasoning (tarragon, paprika, turmeric, cajun)
✨✨✨✨✨✨✨✨✨✨✨
That’s it!!! Simple, easy and delicious every recipe can be altered based on your preference
The butter and milk can be be replaced to make a plant based meal or you can add Shrimp or Fish. Try this at home you will be pleasantly surprised (Even for the people that puts sugar on their grits trust me you will love this I’m one of those people) 🤣😊
