Menu: A five course tasting experience!
Montana
Wild Huckleberry Tart is more than just a dessert β itβs closely tied to the stateβs mountain culture, wild landscapes, and regional identity.
Wild huckleberries grow naturally in the forests of the northern Rocky Mountains, especially in western Montana near places like Glacier National Park and the Bitterroot Mountains. The berries are small, deep purple-blue, and more intensely tart and floral than cultivated blueberries. Because theyβre difficult to farm commercially, most Montana huckleberries are still wild-harvested, which adds to their local prestige.
Nebraska
The Cheese Frenchee is a classic Nebraska comfort-food sandwich that combines the simplicity of grilled cheese with the indulgence of deep-fried diner cuisine. Made by filling soft white bread with melted American cheese, coating the sandwich in crumbs or crushed cornflakes, and frying it until golden and crispy, the Cheese Frenchee became famous through King's Food Host drive-ins during the 1950s. As car culture and roadside dining flourished across the Midwest, the sandwich gained popularity for its crunchy exterior and creamy center, eventually becoming a nostalgic staple in Nebraska schools, diners, and family kitchens. Today, the Cheese Frenchee remains a symbol of Nebraskaβs retro diner heritage and enduring love of hearty, uncomplicated comfort food.
Nevada
Nevadaβs βHigh Roller elk pastry puffsβ can be understood as a savory casino-style appetizer made with flaky puff pastry filled with ground elk, typically seasoned with ingredients like onions, garlic, herbs, black pepper, and sometimes a splash of wine or stock to keep the meat moist and rich. The elk gives the filling a lean, slightly sweet, gamey flavor that pairs well with buttery pastry, creating a contrast between crisp, golden layers on the outside and a hearty, earthy center. In the βHigh Rollerβ spirit of Nevadaβespecially Las Vegasβthis kind of dish would fit right into upscale resort or steakhouse menus that reinterpret Western ingredients in elegant, bite-sized forms. It reflects a broader Nevada culinary theme: taking rugged, frontier-style proteins like elk and transforming them into refined, indulgent small plates that match the stateβs casino-driven dining culture.
New Hampshire
Scallop corn chowder is a creamy New England-style soup made with sweet corn, tender sea scallops, and a rich milk- or cream-based broth, often enhanced with onions, potatoes, butter, and herbs. It has a balanced flavor where the sweetness of corn complements the delicate brininess of scallops, creating a comforting coastal dish. In New Hampshire, scallop corn chowder reflects the stateβs close ties to New England seafood traditions, especially along its short but historic Atlantic coastline, where scallops and other shellfish are commonly used in local cooking. The dish fits into New Hampshireβs broader food culture, which blends seafood from the coast with hearty, farm-based ingredients like corn and dairy. Its origins come from the wider New England chowder tradition that developed from early European fish stews and evolved as settlers in places like New Hampshire adapted recipes to local ingredients, turning simple, seasonal foods into the creamy chowders associated with the region today.
New Jersey
Pork roll pizza is a New Jersey-style fusion dish built around Pork roll, a salty, processed pork product thatβs especially popular in the stateβs breakfast culture. In this variation, slices of pork roll are layered over a traditional pizza crust with mozzarella cheese, and sometimes topped with a cracked egg or additional breakfast-style ingredients. The result blends two local favoritesβpizza and pork rollβinto a single hearty dish that can be eaten at any time of day. It reflects New Jerseyβs broader food identity, where diner staples and Italian-American traditions often overlap and inspire creative combinations rather than strictly separate meal categories.
