"The biggest lesson is that a restaurant can become so much more than a place to eat if you invest in those relationships."

What started as the idea for a small late-night slice shop grew into something much bigger.

In a new piece for Medium, our operating partner, Lisa Herkimer-Walters, reflects on the journey of building Mootz Pizzeria + Bar, the challenges of opening during a polar vortex and navigating a pandemic, and the importance of hospitality, consistency and community in creating an experience guests want to return to again and again.
