Rooted in Italian tradition and elevated by local ingredients, our Maiale showcases a 12 oz Sakura Duroc pork chop sourced through Denver’s Lombardy Brothers Meats from Iowa.

While on the grill, the chop is brushed with an Italian mostarda glaze made from four different yet harmonizing fruits. Sliced and placed over a vibrant green tomato passata, it’s finished with smoked ricotta salata, pickled hakuri turnips, and an herb salad; creating a dish that feels both rustic and refined.

Meet Seth Crane, Dining Room Manager.

Originally from Los Angeles, Seth’s passion for hospitality started early, inspired by stories of his grandfather’s Denver restaurants in the 70s and 80s. He began in the kitchen at 16, and after moving to Colorado for school at CU Boulder, found his place in the dining room where service quickly became his calling.

“I get inspired by connecting with guests on a deeper level. I really enjoy finding ways to be a great hospitalian to everyone that walks in the door. A big part of that for me now is developing others, helping teammates grow, gain confidence, and find their own voice in service.”

Seth holds a Certificate in Restaurant Management from Cornell University, is a Certified Specialist of Spirits, and has passed the Certified Sommelier Exam through the Court of Master Sommeliers.

Outside the restaurant, you can find him woodworking, exploring Colorado’s food scene, or camping in his 1982 VW Westfalia with his wife and Mini Schnauzer.
