Food & Wine Magazine: Chef Max was recently featured in Food & Wine and we thought we'd pass on his advice for home grilling, "For longer smokes—like brisket or ribs—I’ll typically start the fire with B&B Charcoal and then transition to oak logs for the actual cook. The briquettes help build a solid heat base, and the logs carry that deeper smoke throughout the long cook time.

"B&B burns hot and consistent, and the smoke has a richness that really complements meats without overwhelming them. It's clean, bold, and reliable—everything you want when you're working with fire."

Top Of The Town: Thank you 5280 Magazine for naming us Top Burger. From 5280 Magazine: "At its core, the West Coast–style burger is a humble offering: a thin, chargrilled patty topped with a tangy sauce and served on a sesame seed bun. The success of the dish depends on the flavor of the beef—something you’d expect a steak house to nail, and A5 in LoDo doesn’t disappoint.

"Chef Max MacKissock’s six-ounce patty is a blend of Japanese and American wagyu bavette, picanha, and striploin perfectly charred over a wood grill. The house-made milk bread bun, dotted with black sesame seeds, is expertly toasted to retain squishiness, soak up juices, and audibly crunch with each bite. (Added bonus: It sits perfectly flush with the patty, which is oh-so-satisfying.) A concoction of mayo, Dijon mustard, white vinegar, pickles, onion, and Louisiana hot sauce delivers a sharp dose of tang, while a soft German butterkäse melts across the patty like American cheese but isn’t processed. As you might expect, excellence doesn’t come cheap ($22), but at least it comes cheaper ($15) during happy hour." —Perry Santanachote
