Just had the most unforgettable evening at Margot’s chef’s counter—an intimate eight-seat setup where you can watch (and chat with) Chef Justin Fulton as he and the team craft your meal course by course. We embarked on an evolving 12‑course tasting journey that celebrated the seasonal bounty and global flavors of Colorado. Highlights? The foie gras tart was wildly inventive and remains one of our top bites—purely unforgettable. The gnocchi and arancini were also big crowd-pleasers, comforting and creative all at once. If you’re looking for a culinary experience that’s interactive, elevated, and downright memorable, put this at the top of your list. We had a fantastic time and highly recommend it.
