Three years ago, we set a small lot of Chicho Gallo aside — frozen, waiting for the right moment to bring it back. ❄️ That moment is now.

This coffee’s story goes back even further: Ethiopian seeds from pioneering producer Asnakech Thomas → planted in Panama by the Hartmanns, our partners of 20+ years → grown, harvested, skillfully processed → and roasted here in Denver to share with you.

Same Ethiopian heirloom genetics, floral character and all: but grown in Panama, so you also get extra body and berry sweetness. 🍓

Freezing green coffee preserves cup quality over time, so this one’s tasting just as good as it did 3 years ago. Welcome back, Chicho Gallo.

The coffee in your cup starts long before it reaches our roastery. If you’ve ever tasted one of our delicious blends, you may have asked yourself: where does it come from? The answer: chances are, a supplier we’ve worked with for 10+ years.

Many of Novo’s sourcing relationships go back years, and some more than a decade. That matters to us. Long-term partnerships help us better understand the coffees we roast, support quality over time, and stay connected to the people behind every harvest.

Two new Novo summer drinks dropped TODAY at all three Denver cafes.

Ice-cold, fruit-forward, refreshing drinks made for your July routine. As always, our seasonal drinks are created and crafted by our incredible barista team.

What’s on the list:

🌺🍋 The Jamaica Palmer - Spiced hibiscus iced tea paired with lemonade. Jamaica as in the Spanish word for hibiscus, not the country. Bright, floral, and dangerously easy to drink.

🫐☕ The Blueberry Espresso Mule - Inspired by a Moscow Mule, made with ginger beer, blueberry, and espresso. For when you need both refreshing and caffeinated, this one handles both.
