What is KoKo Ni?
---
Koko Ni is an expression of the exact moment we are in, whatever that may be. Whether it's the produce that was picked at a farm in Boulder that day or that week, or the fish that was caught that day that we're bringing in, or what is inspiring us at that moment. Koko Ni is being present. It is about being here in time, connecting with the earth and focusing on what we have and what we can do with it in a playful yet humble way. If something doesn't go exactly to plan we work around it and stay honest.

KoKo Ni x Haykin Family Cider Dinner

Koko Ni is proud to announce our first in a series of pairing dinners! We will be teaming up with of Aurora, Colorado for a special event to showcase the amazing variety of flavors that Dan Haykin and his team bring to life. Our menu for the evening will be inspired by the unique expressions of these single varietal ciders, and paired with their counterparts from the Haykin portfolio.

“One of my favorite memories is sitting on my grandmas roof and cleaning corn for masa”- Silvino.

Meet the second core member of our team, Chef Silvino Sanchez.

Born and raised in Austin Texas, he’s been in the culinary industry for 7 years. Silvino has a deep interest in Mexican and South East Asian cuisine. He finds inspiration from working closely with local farmers and sustainable purveyors and is passionate about different methods of the fermentation process from around the world.

Chef Silvino uses his talent, passion, and attention to detail to showcase his unique approach to cuisine on our Omakase menu.
