Tonight’s Break-Even: Chacolo Ixtero Amarillo—Agave rhodacantha made by Maestro Tabernero Don Macario Partida Ramos in Zapotitlán de Vadillo, Jalisco.

Cooked underground over mezquite and guamúchil. Milled by hand with axes. Fermented for as long as 26 days in volcanic-stone wells. Double-distilled in a Filipino-style still built from copper and hollowed parota wood.

Bright. Fruity. Alive.

Today’s Break Even pour: Rey Campero Pulquero—made from rare Agave atrovirens given to the family by neighbors in Candelaria Yegolé, Oaxaca. This was produced and rested in glass for 48months.

Saline, pine and black pepper meet tropical fruit, mint, jalapeño, toffee and caramel.

Strange. Savory. Singular.

For one night, Palenque Cocina Y Agaveria became a collision of blue corn, wood fire, black miso, rabbit carnitas, burnt corn—and some seriously good mezcal.

Thank you, Brian Rossi Brian Rossi, the entire Palenque crew, Dylan Sloan, Mezcal Vago, and the maestro mezcaleros and families behind every bottle.

To our crew: you walked into a borrowed kitchen and cooked like it was home. And to everyone who joined us—thank you for coming hungry, drinking bravely, and making a beautiful mess of Monday night.

STREET TACO TUESDAY + BREAK EVEN: CHACOLO

All street-size tacos are $4. Chacolo pours are half price.

The label says destilado de agave. The glass says five generations of the Partida family—and a tradition too stubborn to fit inside a denomination of origin. They make roughly 2,000 liters a year. Tuesday, we make it a little easier to taste.

Come hungry. Drink the exception.
