🌍 Origin

Hambela Goro is situated in Ethiopia’s renowned Guji zone, a region famous for producing some of the world’s most renowned coffees. Located at altitudes of 1,900–2,300 meters, the area benefits from fertile volcanic soil, abundant rainfall, and cool, misty mornings. These ideal conditions foster the growth of heirloom varietals, resulting in complex and vibrant flavor profiles. The community around Hambela Goro is known for its deep-rooted coffee culture and meticulous attention to detail during cultivation and processing.

Ethiopia’s Guji zone is steeped in coffee history, with its heritage tied to Ethiopia’s distinction as the birthplace of Arabica coffee. Hambela Goro is part of a legacy of smallholder farming practices passed down through generations. These farms, often intercropped with indigenous shade trees, contribute to both biodiversity and sustainability. Guji coffees like Hambela Goro have become celebrated globally for their distinctive character and bright, fruit-forward profiles.

🛠️ Processing Method
The dry (natural) process at Hambela Goro is a labor-intensive and traditional method. Ripe coffee cherries are carefully hand-picked, spread out on raised beds, and dried under the sun. Regular turning ensures even drying, preventing defects and enhancing flavor. This method imbues the coffee with vibrant fruit flavors and a syrupy body, showcasing the true potential of the region’s unique terroir.

Dambi Uddo is located in the Guji zone of Ethiopia, where we source many Ethiopian coffee at Deke’s. This region is renowned for its high-altitude farms (1,800–2,100 meters above sea level), fertile volcanic soil (andisols), and abundant shade trees, all contributing to exceptional coffee quality. Guji’s coffee-growing traditions are deeply intertwined with its rich cultural heritage, reflecting Ethiopia’s status as the birthplace of Arabica coffee.

Ethiopia’s coffee culture spans centuries, with legends tracing coffee’s discovery to a goat herder named Kaldi. The Guji zone, part of this legacy, is known for its biodiversity and ancient farming practices. Unlike the colonial histories tied to coffee in other countries, Ethiopian coffee has been cultivated by smallholder farmers for generations, primarily for local consumption and cultural rituals. Over time, Ethiopian coffees have become global icons of quality and complexity.

🛠️ Processing Method

The dry (natural) process is one of the oldest coffee processing methods, especially popular in Ethiopia. In this method, coffee cherries are spread out to dry whole under the sun, absorbing natural sugars from the fruit. The beans are then hulled to remove the dried fruit layer. This technique results in a distinctively fruity, wine-like flavor profile with a heavier body, perfect for showcasing the unique characteristics of the region. It is a staple of what we like to serve at the shop and share with online patrons.

Buku, located in the highlands of the Guji region (proximal to Genet), is renowned for producing exceptional Ethiopian coffee. Grown at elevations of 1,950 to 2,150 meters, the cooler climate and fertile volcanic soil provide the perfect conditions for producing complex, flavorful coffee. Guji coffees, especially from Buku, are often sought after for their distinct fruit-forward profiles and clean finish. This coffee scored a 92 out of 100. 🛠️ Processing Method

The dry (natural) process allows the coffee cherries to dry in the sun with the fruit still intact, enhancing the beans with fruity sugars. This traditional Ethiopian method brings out intense sweetness and body in the coffee, while also preserving its bright, floral notes. When roasting dry process coffee, there tends to be more defective coffee due to lack of quality assurance that wet (washed) coffees provide. However, dry (natural) processing is a preferred method of coffee processing amongst our guests and staff.

Buku's dry-processed beans create an aromatic, lively cup:
Fruity tones: Lush blueberries, strawberries, and stone fruit. Acidity and citric fruit notes level off in darker roasts.
Floral hints: Delicate jasmine and bergamot notes in lighter roasts which will be the preferred method of roast.

This coffee undergoes a dry (natural) process, where the coffee cherries are spread out in the sun to dry with the fruit still intact. Fermentation of fruit to the seed imparts especially unique flavors that are more labor intensive than dry processing’s counterpart washed (wet) process.

Guji Genet’s natural processing contributes to its delightful taste and here is what to expect from differing roasts:
Light to Medium Roasts: Ripe red berries, cherries, and tropical fruit notes. A stark, grabby acidity, even for dry process coffees is present as well.
Darker Roasts: Honey-like sweetness with a smooth, syrupy body. With a quieter acidity at city and full city roasts, a dark cocoa and rustic blueberry is prominent in espresso.
Black and Tan: A roast style here at Deke’s where we like to use both a lighter and darker roast profile to not only create more complexity, but also to highlight the best parts of the coffee.

The Kanji Lalji Farm is situated in the Mbozi district, an area known for its excellent coffee-growing conditions. The altitude here ranges from about 1400-1800 meters above sea level, which is ideal for cultivating high-quality coffee.
The Kanji Lalji Farm is family-owned, part of a series of efforts to revive Tanzanian coffee production, which had faced challenges in recent decades due to market fluctuations and limited infrastructure. The farm focuses on sustainable practices and quality improvements.

Coffee Varietals
The coffee varietal typically grown in this region is Bourbon, which is a classic Arabica variety known for its rich flavor profile. Some farms in the Mbozi region might also grow other Arabica varieties like Kent.

Processing Method
Washed Process: The beans from this farm undergo a washed (wet) processing method. This means the coffee cherries are de-pulped, and the beans are fermented to remove the mucilage before drying. The washed process contributes to a cleaner, brighter flavor profile with high clarity in the cup.

Flavor Profile
Brightness: Expect a vibrant acidity, typical of East African coffees, akin to Ethiopian coffee we have served at Deke’s. The coffee often presents a citrus or berry-like acidity, which is termed as “brightness”.
Body: The body is usually medium, giving it enough weight to balance the brightness, without overwhelming the palate. Lighter roasts tend to offer less body whereas darker roasts may be heavier in body but are also influenced by the coffee itself.
Flavor Notes: Common tasting notes in lighter roasts include citrus and floral notes, and sometimes stone fruit or sweet berry flavors present in light to medium dark roasts. In darker roasts you may find spiced and dark chocolate notes.

This coffee hails from the Nyeri region, one of Kenya’s most celebrated coffee-producing areas. Located near Mount Kenya, this region boasts rich volcanic soil and high elevations ideal for cultivating nutrient & flavor dense coffee.
Nyeri’s native red soil is rich in iron oxides, contributing to the coffee’s distinct flavor profile. In fact, andisols – soils created by volcanic ash – are rich in certain minerals dependent on the type of eruption that created them.

Processing Method:
This coffee is processed using the wash method, which involves removing the cherry’s outer fruit layer before it undergoes fermentation, promoting a clean and uniform flavor.

Flavor Profile:
Known for its moderate acidity and dark fruit accents. At different roast profiles, this is what you can expect:
Lighter roasts: Tart citrus with notes of pancake syrup. A City roast of this coffee brings out high-toned and refreshing characteristics of orange peel zest and pomegranate, balanced with delicate notes of rose hips and raspberry tea.
Medium and darker roasts: As if often the case with Kenyan coffees, the Full City roast brings out more berry notes. Hefty cocoa flavors paired with blackberry and dried currant balance the acidity.

Now Featuring: Rwanda Honey Process Kibirizi

Supporting small farms
Kibirizi is a coffee washing station located in the Southern Province of Rwanda. It's known for buying cherries from local farmers, often with just a couple acres of land, in the surrounding villages of Nyamagabe. This CWS does many different types of processing, including wash and natural. And at 88.6 points, this coffee caught our eye due to its intensive and careful honey processing.

Tell me more…
Contrary to how it sounds, honey processing doesn’t involve any honey. It’s actually the mucilage from the cherry!

The honey process involves de-pulping the outer cherry, while leaving some of the fruit intact with the seed before drying it in raised beds. Honey processing can bring forward the fruit flavors in your cup, but also produces more chaff when roasting.

How does it taste?
Think stone fruit turnover in a cup. Look forward to baked fruit, earthy pear jam, and doughy notes:

Lasting fruity tones that melt into a rich dark chocolate when roasted for espresso.
Minimum acidity that brings out accents of fruit juice, with a juicy and thick mouthfeel.
