WE’RE NOW ROASTING OUR BEEF IN HOUSE 👊🏻💥

For a long time, we sourced a super high quality roast beef that we loved but since we opened our new prep kitchen, we now have the space to roll out upgrades just like this one. House roasted beef, slow cooked and sliced thin, au jus made from the pan drippings. Simple, classic, delicious.

And shout out to Willa, who leads our Prep & Production kitchen and produces every single side, spread, beef, etc.. in our new space. Willa oversees some serious volume over there and keeping a handle on all of it is a massive feat that the team makes look easy.

This quick, 5 minute team meeting right before we open our doors is deeply important to us and holds a lot of weight. Our leadership team sets the tone for the day, we get on the same page, hype each other up and talk details. Lot of details. This allows us to show up fully and hold each other accountable to bringing our best every single day.

MEET HAMILTON 🤝

Ham is the youngest person that works here but is wise beyond his years and is an incredibly grounded, sharp dude. He’s talented at pretty much everything he does and his positive energy and impressive work ethic make us better, no doubt.

If he’s not at T&P or zipping around town on his bicycle, you’ll catch him drumming in his incredible band, .

Ham also grew up surrounded by entrepreneurs with his family owning , our friends and Third Street neighbors, and knows firsthand the hustle required to make a small business thrive.

Hams another example of why we think so highly of our team: good, honest people with varied talents and skillets all working together to make this thing the absolute best it can be day in and day out.

We spent the last few days spending some quality time with the team out in the woods. It was great to catch our breath and hit pause for a while, but we missed y’all and are ready to get after it and do what we do.

And we say this a lot but it was nice to take a few days to be reminded that the T&P team is filled to the brim with the kindest, funniest, brightest humans and we’re super proud of every single person on this squad.

LOT’S GOING ON TODAY! HERE’S THE LATEST IN T&P NEWS:

1. Leens Chicken Sandwich, the special from yesterday, is all gone. That one went crazy. To soften the blow, we have a super fresh batch of incredible Mortadella Pasta Salad with elbow macaroni, excellent quality Mortadella from Fra’ Mani, sun dried tomatoes, pesto aioli, parmesan, crushed red pepper

2. We have teamed up with the University of Dayton to celebrate Parents Weekend. The first 50 UD students through the door with a valid student ID will receive a FREE T&P t-shirt with any purchase.

3. We will be closing at 2pm tomorrow, Sunday 9/27 and will remain closed on Monday and Tuesday for our annual staff camping (glamping) trip. We will reopen for normal hours on Wednesday 9/30. If you have placed a catering order in that window, not to worry, we still got you!

IT’S THE WEEKEND AND WE GOT AN ABSOLUTE BEAUTY OF A SPECIAL FOR Y’ALL.
