Our Story

Island Fusion Grill is a combination of Jamaican, Cuban and Vegan Cuisine! We blend herbs from both countries and fused it with the world! The Chefs reached back to their roots in the hills of Jamaica in Christiana, Manchester and the town of Las Guasima, Cuba! We lived off the land and created dishes from what we grew on our property. We had one of each tree that bore fruit and vegetables. We had Chocolate trees, Breadfruit trees, Ohtaheti Apple trees, Ackee trees, Almond trees, Walnut trees, acres of Bananas, Ortanique, Orange, Guava, Plum, Rose Apple, Chinese Apple, Locust trees (very rare) and in the center of common we had a very huge Jackfruit tree. It was just an amazing life growing up in the country and running barefoot, climbing trees and having fun!
