dipping the rice into the soy sauce will soak up too much soy and may make the sushi too salty for your liking!

UNLESS!

Salty is your thing then dip away!

HIBACHI refers to a small cooking stove heated by an iron hot plate? (Teppan in Japanese)

Shigeji Fujioka of the Japanese Restaurant chain Misono in Japan was the originator of this post WWII style of Japanese cuisine in 1945.

They are still open to this day!
