🍏KEEPING IT REAL🍎
Cider, when made properly, is a beautiful thing. Hailing from just south of Austin, Texas Keeper has been quietly producing some the state’s best ciders for 13 years, elevating and pushing the boundaries of what cider can be. Chances are if you live in North Texas, you either haven’t tried them before or haven’t seen them around in a while. That changes now.
We’re thrilled to be the ONLY place in DFW where you can find , both on tap and by the bottle! Selections include:
🍏Texas Keeper No. 1 on tap! Their flagship cider is crafted from 6-12 apple varieties fermented individually and blended to build a well-balanced, dry cider with notes of ripe pear and melon, subtle rosewater and honeysuckle, with a crisp green apple finish.
🍒Auguste Cerise - 750ml bottle - TXK’s take on a fruited cider, it features a blend of three American heirloom apples and one modern variety aged 6 months on lees and then double fermented with Montemorency and Balaton sour cherries. Honeyed cherry on the nose, ripe apricot and nectarine on the palate, and a gently tart finish.
🐝Honey Thief - 750ml bottle - Cyser is the love child of cider and mead, made from apples double-fermented with local wildflower honey and a touch of estate honey from their own hives. The result is a brilliant combination of orange blossom, honeysuckle, jasmine, crisp apple and nectarine.
🪚Dovetail - 750ml bottle - Pommeau is to cider as port or sherry are to wine. Utilizing techniques often associated with fortified wines, this co-ferment of different lots and vintages of cider has been aged without topping for 4 years in American oak casks and a single Calvados barrel. The result is an exceptional still fortified apple wine, carrying notes of honeyed apricot, peach, toffee, and soft tannins from long oak aging.
