When I woke up today I was reminded about this event by a friend who helped me out that day. I was excited about this event and it helped me feel like I was finally back at home. Never knew what the future would hold but shortly after this I sat with Cindy and Mando at their sister’s house and discussed the future. 2 years later we did our first pop up as Olmo market and it went beautifully. I’m proud of us and our commitment and the love and trust we’ve given to each other. The path we paved was not easy and we know what it’s taken to get here despite how easy anyone might think it was. We are approaching our third month and we are locked in. Love my newly found family and can’t wait to show y’all wha we can do together.

Sampling some soy based tinga I made with a roasted garlic salsa verde and in house rosemary chips. So good!!! Highly recommend this as a burrito bowl 😋 I use chile ancho in my version of this and I love the flavor it provides. Come find out this weekend ✌🏽✌🏽✌🏽

I heard it and it’s also Taco Tuesday so here’s my offering:

Tacos al v***r de chorizo, papa y zanahoria.

Seitan chorizo, potatoes and carrots mixed with a 4 dried pepper sauce and miso sauce. Marinated overnight to let all those flavors talk for a bit.

Tortillas are dipped in a pasilla and guajillo red sauce then lightly fried.

Topping it all off with some lightly sautéed white onions, a roasted poblano, red onion & carrot quick pickle, salsa tomatillo and my tofu queso fresco. A bit of green cabbage and a bed for a nice crunch and freshness.

I hope y’all come out tonight. Rumor has it there’s a local artist doing a secret show as well.

7pm til sold out. Got about 80 of these baddies.
