I have shared numerous times that my daughter, Erin Young and I have stressful and fast paced jobs and we bake in our off time for fun and because it's a great stress reliever!

I had been working on an extremely complicated and emotional case for over a month and it was scheduled to FINALLY close today. To stop over processing everything that could go wrong with the case I got up at 3 am and decided to work on developing a recipe for mooncakes.

The ingredient list is complicated and not easily found here on the Plateau. It takes two kinds of rice flour. I was reading reviews of online products and most reviews complained of freshness. I looked into rice flour processing. Lucky me, I have a KitchenAid with cool attachments I have collected over the years including a grain grinder I was gifted from the 1980's. While loud it is extremely effective.

We have added some of the cutest cookie molds to our collection at https:www.facebook.com/groups/crossvillesugarbuzz.

Tonight I experimented with two recipes that were shortbread variations. It took about 3 hours to make and bake. Each cookie is about 6 inches.

Our experiments were mostly to see which recipe worked better in the mold and which tasted better, what techniques produced consistent results and what cooking time was needed. The trick is getting them out of the mold without distorting them. They were a fun way to spend the evening but I think I shall call it a night.
