This is what 48 hour cold fermentation looks like. Perfectly fluffy, light, and full of flavor.

Giving our dough a full 48 hours to cold ferment allows the yeast to slowly develop deeper flavor, better texture, and that perfect airy crust. The slower process creates a dough that’s crisp on the outside, soft on the inside, and easier to digest than rushed dough. Good pizza can’t be rushed and this is the proof “pun intended”

My vision for patio seating at Ghost: we have some unused space that’s no longer serving a purpose, and I think it would be a perfect opportunity to transform it into a welcoming patio area for customers.

We’ve officially chosen the city for our next spot.
