Planned for this weekend is Colombia Tabi—a unique and vibrant roast from the famed Huila region! Tabi means "good" in the language of the indigenous Guambiano people, and this variety lives up to its name in every cup. Developed by crossing Typica, Bourbon, and Timor Hybrid, Tabi combines resistance to coffee leaf rust with exceptional cup quality, featuring a tall tree with large beans and a rich yield.

This medium roast shines with notes of caramel, red fruit, and chocolate, balanced by clean citrus acidity and a smooth, silky body. You might find hints of orange and apple alongside its creamy sweetness and floral aroma—one sip and you’ll see why it’s praised by coffee enthusiasts and awarded high cupping scores. It's regular coffee - but elevated.

This weekend we’re roasting two coffees:

First is our variety roast: Ethiopia Gugi Kayon Mountain Natural. Grown in the remote Guji region, this coffee highlights floral, sweet notes with hints of citrus, tangerine, and light berry.
This Organic Typica varietal leans more floral than fruity, with a perfumed, garden-like aroma. We will give it a medium/light roast. A great pick if you’re looking to try something new.

*"Also, this weekend (and every two weeks) we are roasting our Costa Rica La Armistad Organic Honey Process. It's available for $15/bag. We will have extra available if you want to try a sample of it. It's phenomenal! We order this in larger quantities to get a better deal and it's prime stuff.

Hey everyone—some exciting things happening over here at Hess Family Roasters!

First, we just got our hands on a larger capacity professional coffee roaster, which means we’ll be able to keep up with bigger orders and dial in our roast profiles even better. We’re now measuring bean temp directly, so expect even more consistency in every batch.

Secondly, we’re rolling out something new: a biweekly subscription roast. This is designed to keep things simple and affordable for our regulars. We’ll feature the same coffee every two weeks: Costa Rica La Amistad—a honey processed, organic-certified coffee that’s smooth, clean, and super easy to drink. If you’re looking for a go-to daily coffee, this is a phenomenal cup.
Price will be $15 per bag. Let us know if you want in!
**Next roast date is May 30 for Costa Rica.

Third, We’re still doing our weekly roasts at regular price, $16 per bag. We will now start rotating through a list to make things more predictable. We’ll share a preview of what’s coming up over the next few weeks so you can see what's upcoming. This list may shift a bit as new coffees come in, but the goal is to keep a solid lineup of favorites available. Please let us know what your favorites are and we will try to include them!

This weekend we’re roasting Indonesia Java—low acidity, full body, and those classic earthy, chocolatey, slightly spicy notes. Great for espresso or anyone who likes a richer cup.

This week's roast is Sumatra Batak. This dark roast is a high-quality Arabica coffee grown in the Lintongnihuta region south of Lake Toba in Northern Sumatra, Indonesia. It is known for its rich, clean and spicy earthy flavor with notes of cedar, to***co, and syrupy body, often featuring a creamy mouthfeel and low acidity. The coffee is produced by smallholder farmers and processed using traditional methods, including the wet-hulling process. Its strong aroma can fill a whole room.

This week we’re featuring: Ethiopia Sidama Durato Bombe, a high-elevation coffee that highlights the classic washed Ethiopian profile with clarity and precision. Organic certified.
Grown in the Sidama region, this lot benefits from ideal altitude and careful processing, resulting in a clean, articulate cup. Expect a structured acidity with notes of blueberry, bergamot, and soft florals, supported by a tea-like body and a refined, honeyed sweetness.
Compared to heavier, chocolate-driven profiles, Durato Bombe is all about transparency and nuance—each sip reveals layered fruit and floral characteristics with a crisp, elegant finish.

We’re approaching this with a controlled medium roast to preserve its aromatic complexity while slightly extending development to round the acidity and enhance sweetness. This makes it versatile across brew methods while still shining in pour-over or drip.

This weekend we will feature Organic Bali Blue Moon. Bali is a small island in Indonesia. These beans will taste similar to other coffees from Indonesia, but have more complexity and less earthiness and bitterness. The low acidity lends to a smooth body, strong chocolaty tones, and hints of syrup and vanilla. They will be roasted medium-dark. **All of the coffee grown in Bali is organic, because pesticides, insecticides and chemical fertilizers are strictly forbidden on the island.

This week we are roasting up a nice medium roast: Nicaragua El Diamante, a coffee celebrated for its balanced elegance and refined sweetness. Produced in the prestigious highlands of Jinotega, this "Diamond" of a coffee represents the very best of Nicaraguan high-altitude farming.

While many Central American coffees are prized for their crispness, El Diamante stands out for its incredible smoothness and clean finish. Grown in rich volcanic soil, these beans develop a sophisticated profile that is both comforting and complex. You can expect a beautifully balanced cup featuring bright notes of stone fruit, a honey-like sweetness, and a lingering finish of milk chocolate and roasted almonds.

We are giving this a precise medium roast to highlight its natural sweetness while maintaining that silky, medium body. If you enjoy a vibrant yet smooth coffee that transitions perfectly from your first morning cup to a mid-afternoon treat, the El Diamante is a must-try.

Roasting this weekend: Peru Amazonas!

Peruvian coffees are known for being exceptionally clean and smooth, and this microlot from the Amazonas region lives up to that reputation. Grown by a certified organic and fair trade co-op called San Ignacio Rio Amoju near the start of the Amazon River, this offering provides village farmers with purpose and opportunity through sustainable practices.

The beans have been carefully sorted and roasted to highlight their rich, satisfying milk chocolate and hazelnut flavors. You'll find a smooth, sweet, and clean profile in a lighter roast, but we especially love taking this one a little darker to bring out notes of a rich fudge brownie with nuts. It's a mellow, easy-drinking coffee you can enjoy all day!

To help celebrate Easter we will be roasting a bright, light Ethiopia Gugi Kayon Mountain Natural Process. The Guji Region is one of the most remote coffee regions, but also produces some of the most legendary coffees. This is a natural processed coffee to accentuate the floral and sweet tastes of this Ethiopian bean. It really shines as a pour over or cold brew.
They grow Typica varietal and it really brings out more floral notes than fruity notes, but there is definitely citrus and tangerine with slight backberry notes but also perfumed aroma. We plan to roast this bean light in order to best enjoy them. If you have never branched out of your coffee comfort zone, this would be a great one to try!
