New variety this weekend! African coffees always deliver some interesting flavors. Burundi Tangara – Ngozi, is a smooth washed process African coffee with a rich chocolate foundation and a touch of dried-fruit brightness and a slight savory finish. Roasted medium to medium-dark, it makes an especially satisfying everyday cup for drip, French press, or espresso. It's a special choice for my birthday weekend!

This week's roast is Sumatra Mandheling Aceh Harimau Tiger, Grade 1. This double-pick lot offers classic Sumatran body with a cleaner cup than typical Mandheling — think straight chocolate sweetness, hints of soft fruit and citric brightness, balanced by a good earthy spice. Roasted dark, it moves into a fuller-bodied, low-acid cup with roasty, baker's-chocolate notes, and like most wet-hulled coffees, it tastes best after resting 24 hours or more. I tried some last weekend and it was some of the best dark roast I've ever had.

This week we’re roasting two coffees: Ethiopia Sidama Durato Bombe, and Costa Rica La Amistad. Both are organic certified. The Ethiopia has a stronger fruit forward profile and the Costa Rica has more mild sweetness. Each are excellent.

Grown in the Sidama region, this Ethiopian lot benefits from ideal altitude and careful processing, resulting in a clean, articulate cup. Expect a structured acidity with notes of blueberry, bergamot, and soft florals, supported by a tea-like body and a refined, honeyed sweetness.
Compared to heavier, chocolate-driven profiles, Durato Bombe is all about transparency and nuance—each sip reveals layered fruit and floral characteristics with a crisp, elegant finish.

We’re approaching this with a controlled medium roast to preserve its aromatic complexity while slightly extending development to round the acidity and enhance sweetness. This makes it versatile across brew methods while still shining in pour-over or drip.

This week’s roast is Nicaragua El Diamante, a smooth and balanced medium roast from the highlands of Jinotega. Grown in rich volcanic soil, this coffee offers bright stone fruit notes, honey-like sweetness, and a clean finish of milk chocolate and roasted almonds.
We’re roasting it to medium to highlight its natural sweetness and silky medium body, making it an easy choice for both morning and afternoon cups.

This weekend we are roasting two coffees: 1) Costa Rica La Armistad and 2) Organic Bali Blue Moon. "Both are available this weekend, but the Costa Rica drops to $15/bag if you sign up to get it every two weeks.

Bali is a small island in Indonesia. These beans will taste similar to other coffees from Indonesia, but have more complexity and less earthiness and bitterness. The low acidity lends to a smooth body, strong chocolaty tones, and hints of syrup and vanilla. They will be roasted medium-dark. All of the coffee grown in Bali is organic, because pesticides, insecticides and chemical fertilizers are strictly forbidden on the island.

We are back after a brief summer break. Planned for this weekend is a new bean: Guatemala Atitlán – Los Volcanes.
It's a washed coffee grown on the volcanic slopes around Lake Atitlán, offering
a cup centered on rich chocolate and cocoa, balanced by bright red apple and stone-fruit sweetness. A subtle floral–spicy lift adds complexity, while a smooth, sweet finish rounds out the profile, making it ideal for highlighting chocolate and fruit notes in both pour-over and espresso.

This week we are roasting up a nice medium roast: Nicaragua El Diamante, a coffee celebrated for its balanced elegance and refined sweetness. Produced in the prestigious highlands of Jinotega, this "Diamond" of a coffee represents the very best of Nicaraguan high-altitude farming.

While many Central American coffees are prized for their crispness, El Diamante stands out for its incredible smoothness and clean finish.
