Most Italian restaurants hide the kitchen. We put ours on display.
The reviews have been rolling in — and lately they've all been saying the same thing. Best lasagna in North Georgia.
We'll take it. But we'd rather you come see why.
Sauce coming together in one pan — garlic hitting hot oil, tomatoes breaking down, the whole thing loosening and thickening at the same time. Pasta in the water beside it, timed to the second so it comes out with just enough bite left. Then the two meet in the pan, tossed until every strand is coated, and it's in front of you before the steam settles.
That's not a video. That's a Tuesday, six feet from your table.
The lasagna gets built in the morning, layer by layer, before the doors open — because some things can't be rushed at seven o'clock. Pizza stretched by hand and fired while you watch. And everything's made here — the bread rolls, the dough, even the gelato.
Come around noon and you can catch Chef Paul prepping through the back window. The quiet part of the day, when the real work gets done.
