Farmacia Trattoria Located in the old Arnold Drug building, Farmacia is a beautiful Italian Trattoria in the heart of historic Cornelia.

Our artisan Italian and wood fired pizzas provide an opportunity to experience an artisanal flavor of Italy. Our authentic Italian is prepared with the finest ingredients including flour imported from small Italian farms, and aged Italian cheeses. Using time-honored technique, and even Italian equipment, this is an opportunity to experience an artisan flavor of Italy. The building we occupy served

the community as a pharmacy for over 75 years before closing. When we purchased this property, the basement was a time capsule to medicinal treatments going back to the 1940s. We embraced the history while forging a new path by naming our restaurant Farmacia (Italian for Pharmacy), and promoting the famous Hippocrates philosophy:

March is National Sauce Month — and at Farmacia, the sauce is where the story begins. 🍝

Saffron cream on the Lobster Ravioli — one of the most expensive spices in the world turning cream into something golden and extraordinary. Mushroom marsala reduction on the Veal Shank — built from scratch, layered and slow. Pistachio pesto on the Emerald Shore — rich, nutty, vivid green against pan-seared scallops. Roasted corn purée on the Elote Carbonara — the fusion sauce that started conversations.

Smoky mezcal. Spicy nduja. Rigatoni that holds every drop.

The Mezcal-Nduja Rigatoni is one of the dishes on our menu that makes people stop mid-bite and look at each other. Nduja is a spreadable, fiery Calabrian sausage — the kind of ingredient that Italian grandmothers know by heart. Chef Michael took that heat, married it with the smoky depth of mezcal, and built a sauce that clings to every ridge of the rigatoni.

This is what happens when Italian technique meets a chef who refuses to stay inside the lines. The foundation is real. The result is something you won't find anywhere else in North Georgia.

Every pizza at Farmacia starts in Italy.

Not with a recipe. Not with inspiration. With the grain itself. We source premium flour from an Italian mill — not commodity flour off a distributor shelf, but grain selected and milled specifically for the kind of dough we build here.

It ships from Italy to Cornelia, Georgia. That's a long trip for flour. Here's why we do it.

Long fermentation changes the chemistry of the grain. Our 24-hour-plus rest breaks down complex starches, develops the gluten structure differently, and creates flavor compounds that quick-rise dough simply cannot produce. The crust comes out complex — nutty, with a chew that tells you something happened before the oven ever did its work.

Most places skip this step. It's expensive. It's slow. You have to plan a full day ahead for every single ball of dough. We don't skip it because you taste the difference in every pizza we serve.

The flour is the foundation. Everything else builds on it.
