Texas Fajita Chicken Casserole

Ingredients :
• 4 cups cooked, shredded chicken (about 3 large breasts)
• 2 cups instant rice (uncooked)
• 1 (10.5 oz) can cream of chicken soup
• 1 cup sour cream
• 1 cup frozen diced onion and bell pepper mix
• 1 (10 oz) can diced tomatoes with green chilies (like RoTel), with juices
• 1½ cups chicken broth

Dolly Parton’s Biscuits

Ingredients

2 cups self-rising flour

1/4 cup shortening

3/4 cup buttermilk

2 tablespoons melted butter

Directions

1. Preheat oven to 425°F.

2. Add self-rising flour to a mixing bowl.

3. Cut in shortening until the mixture looks crumbly.

4. Pour in buttermilk and gently stir until a soft dough forms.

5. Turn dough onto a floured surface and pat it out.

6. Cut into biscuits and place on a baking sheet.

7. Bake for 10–12 minutes, until golden.

8. Brush warm biscuits with melted butter before serving.
