And just like that Arby’s became obsolete.
I started with roughly 4lbs of eye of round seasoned with a base layer of AP rub and McCormicks steak rub.
I smoked at 250 for like 2 hours until the internal temp was 125 then I removed the lid and rebar to get the temp way up and seared each side until it was 135. I wrapped the roasts in plastic wrap with a little butter and also foil to rest.
Sliced as thin as possible and put on a roll with a little creamy horseradish
