And just like that Arby’s became obsolete.
I started with roughly 4lbs of eye of round seasoned with a base layer of AP rub and McCormicks steak rub.
I smoked at 250 for like 2 hours until the internal temp was 125 then I removed the lid and rebar to get the temp way up and seared each side until it was 135. I wrapped the roasts in plastic wrap with a little butter and also foil to rest.
Sliced as thin as possible and put on a roll with a little creamy horseradish

Looks like I’ve lacking on this account. I’m gonna tryout something new today. Eye of round roast aka roast beef. I seasoned with an AP seasoning and McCormicks steak rub. The plan is to smoke until 125 roughly then crank the heat and give them a nice sear.

Today is my first attempt at making Birria. I know I should use beef cheeks but I’m not that adventurous when it comes to certain cuts of meat so I am using Chuck roast instead. My plan is to smoke these for roughly 2 hours then finish off in a crockpot.

Smoked up some awesome looking St Louis cut ribs today. I stated with a light trim then peeled off the membrane. For a binder I used some W sauce then seasoned with a little salt then Honey bee hot with some extra coarse black pepper on top. I fired up my with Kingsford charcoal and some sugar maple chunks. I let these just hang out in the barrel for about 3.5 hours and didn’t do a thing to them. Once they were done I brought them inside and brushed 2 out 3 racks with hot n spicy and put them back on the pit for about 5 minutes. #.

Smoked Cajun turkey breast. I started by doing an overnight brine in the Briner bucket. Then seasoned the bird with rib shack cajun seasoning and smoked in my pit barrel cooker over Kingsford and pecan chips.
