š„©šæ 1. Authentic Chimichurri
A vibrant, herby, garlicky Argentine sauce that is the ultimate pairing for grilled steak or chicken.
Ingredients:
⢠1 cup packed Fresh Parsley leaves
⢠1/2 cup packed Fresh Cilantro leaves
⢠2 Tbsp Fresh Oregano leaves (or 1 tsp dried)
⢠3-4 Garlic cloves, peeled
⢠1/2 - 1 tsp Red Pepper Flakes (adjust for heat)
⢠1/4 cup Red Wine Vinegar
⢠1/2 cup good quality Olive Oil
⢠Salt and Black Pepper to taste
Instructions:
1. Finely chop the parsley, cilantro, oregano, and garlic. (Hand-chopping yields the best texture, but you can pulse gently in a food processorājust don't puree it into a paste).
2. Place the chopped herbs and garlic in a bowl. Stir in the red pepper flakes, red wine vinegar, salt, and pepper.
3. Whisk in the olive oil until combined.
4. Let sit at room temperature for at least 20 minutes before serving to let the flavors meld.
