**Kham-Doshama Plov**, our traditional baked pumpkin pilaf, brings together the colors, aromas, and warmth of Azerbaijani cuisine in one unforgettable dish.

A whole pumpkin is carefully filled with fragrant **saffron rice, tender meat, naturally sweet pumpkin, dried fruits, nuts, and traditional spices**, then slowly baked until all the flavors come together.

The pumpkin becomes part of the meal itself — soft, sweet, and beautifully paired with the savory richness of the plov.

**Lobiyalı Plov (Lobia-Chilo Plov)** is a beautiful example of Azerbaijani cuisine—fragrant, simple, and deeply rooted in tradition. 🇦🇿

Unlike many of Azerbaijan’s meat-centered plovs, Lobiyalı Plov combines fluffy long-grain basmati rice with tender **black-eyed peas**, allowing their delicate earthy flavor to become the heart of the dish. At the bottom awaits one of the most treasured parts of Azerbaijani plov: **golden, crispy qazmaq**.

Traditionally paired with **fried or smoked fish**, it creates a wonderful contrast of delicate rice, hearty beans, crisp qazmaq, and savory fish.

Born from Azerbaijan’s rustic culinary traditions, Cız-Bız takes its name from the irresistible **“cız-bız” sizzling sound** of ingredients cooking together in a hot pan. Traditionally prepared with lamb and various cuts of meat, it is combined with golden potatoes and onions and seasoned simply to let the rich flavors speak for themselves.

At **Happy Skewer**, our version brings together tender Halal lamb, crispy potatoes, caramelized onions, aromatic spices and fresh herbs — hearty, comforting food inspired by the flavors of home.
