ALREDO RAMIREZ! Remember that name!

We recently brought in our second microlot from our visit to Guatemala last year. This coffee, produced by Alfredo Ramirez, stands out for its creamy body paired with a subtle sweetness.

Ethan and Kenny first cupped this coffee in Antigua, Guatemala, and immediately agreed to bid high to secure a portion of the limited lot. On the cupping table, Kenny noted: “rich body, intense flavor, like this sweetness.” What’s remarkable is that now, back at our roastery in the Hilltop of Columbus, Ohio, Ethan’s profile roast of this coffee has captured those same qualities.

During our visit to the Tectitán region of Huehuetenango, we were hosted by our partners on Mr. Ramirez’s property. We walked among the very trees that produced this coffee, and Mr. Ramirez even welcomed us into his home for lunch.

As we went to Guatemala last year the goals were aplenty.

Part of our experience was seeing a need and being asked to help. And that being who we are, we jumped in.

Many of the coffee farmers have limited land space especially for an appropriate way to dry their coffees. We collaborated with our trader and two other roasters ( and .coffee) to donate to provide enough supplies for the completion of 22 individual patios. Prior to this most drying was done on tarp or tin roofs which affects moisture, coffee consistency, and quality.

Jaime Morales Pérez is a passionate artisan of specialty coffee cultivation from Sacchumba, Tectitán, in the coffee-rich department of Huehuetenango, Guatemala. Over the last 14 years, Jaime has nurtured his 0.88-hectare farm, El Tarro, perched at an impressive altitude of 1,963 meters above sea level—a key factor in producing coffee with remarkable complexity and clarity. The farm’s name, “El Tarro” (The Jar), pays homage to a distinctive native plant growing on the property, symbolizing Jaime’s deep-rooted connection to his land and its natural biodiversity.

Jaime’s journey into coffee farming began with humble beginnings, transitioning from tomato cultivation to coffee after recognizing the exceptional potential of Sacchumba’s altitude and microclimate. What if your coffee tasted like peaches? PEACHES!

This Colombia La Serena coffee is a honey processed and peach osmotic dehydration treated coffee. The producer, Juan Puerta is a young, first-generation Colombian coffee producer, who entered into the industry through university studies. As a student at the local university, Juan studied food science, with agriculture and gastronomy being of utmost importance to Colombian culture and the economy. 

For this coffee, cherries are selectively picked and brought to the processing center in burlap bags. After 12 hours, the cherries are sorted and floated to separate out damaged, under- or overripe cherries, and otherwise defective cherries and seeds. From there, the cherries are taken to a depulper, from which the freshly depulped seeds, retaining their mucilage, fall into a barrel lined with plastic.

Juan then slices up ripe peaches and creates a solution of water and glucose that he mixes in with the coffee before sealing the bag and barrel shut. After 48 hours, the bag is unsealed and the coffee spread onto patios to dry under the sun for an average of 15 days.
