Sometimes you just have to look up.

Working in the front window today, looked out the window and saw Columbia Fire & Rescue, Tennessee Station 1 with the ladder fully extended. 🚒

You never really know what you’re going to see when you’re downtown. There’s always something happening, always something to discover, and soon, Taco Theory will be right in the middle of it.

Historic downtown. Real community. A little bit of theory in everything.

🚧 Another item checked off the Taco Theory opening list! 🌮

Today we replaced the cracked front glass, and we’re one step closer to opening our doors. Progress is happening every day, and we can’t wait to welcome everyone in.

A huge thank you to Gibson’s Glass & Mirror for the quick, professional job. They worked through the heat, got it done fast, and made the whole process look easy. We truly appreciate the great work!

Now that the new glass is in… who’s the best window tint company around? Tag them in the comments. We’d love to support another local business.

Today, I finally get to answer it.

📍We're coming to 9th & S. Main in Downtown Columbia!

Seeing our trailer parked in front of what will become our first permanent home is a dream come true.

We're creating more than a taco spot we're building a place where food, culture, creativity, and community come together.

There's still plenty of work ahead, but I wanted to finally share where this next chapter begins.

Today marks the beginning of a new chapter for Taco de Theory.

We're officially starting the build-out of our very first brick-and-mortar location. This isn't just about opening another place to eat. It's about creating a home for the community we've been serving from our trailer, one where we can bring even more creativity, connection, and unforgettable flavor to every guest.

Over the coming weeks, we're bringing you along for the journey from empty space to opening day. You'll get behind-the-scenes looks at the construction, design decisions, challenges, wins, and everything in between.

None of this would be possible without every customer who's ordered a taco, shared a post, booked us for an event, or simply believed in what we're building. Thank you for helping us reach this moment.

Day 1 starts now.

You know the tacos were hitting when somebody left behind a hair bow. 🎀🌮

Tonight was the first event we’ve helped bring to life alongside Columbia Main Street, and seeing families, friends, and our community come together made it all worth it. Somewhere out there is a little girl who was having so much fun she forgot one of the most important accessories of the night.

Thank you to everyone who came out, supported local businesses, grabbed tacos, and helped make this event a success. The energy was incredible, and this is only the beginning.

If tonight was any indication, you’ll want to get there early. Until then, you don’t have to wait for an event to get your Taco de Theory fix we’re serving up your favorites all week long.
