Well Korte Meat Processing rib burn is in the books. We did about as we expected. Middle of the pack but had a blast. Our timing was off, box building definitely needs practice and we came home one canopy short as it blew over once (after being anchored) and then literally collapsed as a box was being built and had to be held up around me while the box was completed. No excuses - congrats to all the great teams who heard their name. Clearly a lot of rust that needs to be shaken off if we get out there again.

We are sad to say we will not be vending Smokin' on Main this year. This is only because of my pending surgery on the 24th. We will be back in the mix next year. We will be back at it at Smoke N for the Kids in Troy 8/16 and 8/17 with a couple of menu twists. Please continue to patronize Smokin' on Main - it remains one of the premier events in the area.

Everyone scattered for Christmas so we had Christmas today and what a feast it was. 25 1/2 pound brisket with perfect burnt ends, pork belly burnt ends, slow smoked pork belly with a borbon/maple glaze, baked beans and (not pictured) potato salad. Oh my!
