Childhood had a taste. The sweetness of home, the bitterness of growing up, the smell of za’atar on warm bread. Cheese manoucheh melting between our fingers, tomatoes, cucumbers, mint and olives spilling from every bite. We grew older, but some flavors refused to age. Maybe home is not a place. Maybe it is a memory we can still taste. And sometimes, all it takes to return is a bite from Thyme Machine.

Of a mother waiting by the window. Of a father hiding his fear so his children could dream. Of lovers who kissed before leaving Beirut. Of children who grew up between goodbyes and returns.

Tell me of generations who lost homes, but never tenderness. Who carried Lebanon in a song, a smell, a bite.

Some places live on maps. Lebanon lives in us.

To our amazing Thyme Machine family,

Even though Thyme Machine has closed, many of you still message me asking where you can find a good shawarma or Mediterranean meal.

I’m happy to introduce Athara, a new Mediterranean food truck now serving at 7354 East Brainerd Road.

If you’ve been missing our food or simply have a craving for shawarma and other Mediterranean favorites, stop by and give them a try. They’re a local small business, and I know how much your support means.
