Sometimes people ask why we don’t use cheaper products to lower our food costs. This is why. A very friendly company talked to me about switching to their meat, it was cheaper much cheaper. $40 a case cheaper, $50,000+ a year cheaper. I will gladly pay $50,000 for the better steak. And if I find better steak I will pay more. I look at every single item we sell every few months and ask myself what I can do to make things better. Because you all deserve the best sandwiches I can make.

We do not and will not use AI for our food photography! AI and food do not go together and we are extremely anti its use in restaurants. We do stage our photos like everyone else. I have included three pictures. The first is a staged Bbq Beef Philly, I make sure it looks pretty, cheese is all on top, and I may add a squeeze of sauce. The second picture is the same picture with color and tint adjusted to look more natural as the lighting and my photos are generally terrible 😂, this is the one I use to promote the special. The third is an unedited unstaged photo of a finished sandwich going out to a customer. As you can see what you get is 99% the same as the photo I post. I hope restaurants stop using AI as I feel it is ruining our talent and craft and anyone who is truly skilled doesn’t need a computer to show their skills.
