This Cowboy Cookies recipe comes straight from my Hall County 4-H Jr. Food Show cookbook from the early 1980s, and it has been a treasured family favorite ever since. My sweet friend, Kristi Bailey Wagner—one of my dearest and oldest friends from elementary school—made this for our food show, and it has held a special place in my heart (and kitchen!) ever since. Every time I bake it, I’m reminded of those simple, joy-filled days and the friendships that have stood the test of time. Made even better with fresh, homegrown Arizona Pecans, it’s a little taste of tradition we still love to share today. 🌵

Happy Easter from Arizona Pecans! We're excited to share this delicious recipe with you to celebrate the season.

Baker’s German Chocolate Cake

*CAKE INGREDIENTS

· 1 (4 ounce) package baker's German sweet chocolate · 1⁄2 cup boiling water · 1 cup butter or 1 cup margarine · 2 cups sugar · 4 eggs, separated · 1 teaspoon vanilla · 2 cups all-purpose flour · 1 teaspoon baking soda · 1⁄2 teaspoon salt · 1 cup buttermilk

· FROSTING INGREDIENTS · 1 1⁄2 cups evaporated milk · 1 1⁄2 cups sugar

· 4 slightly beaten egg yolks · 3⁄4 cup butter or 3/4 cup margarine · 1 1⁄2 teaspoons vanilla

· 2 cups of shredded coconut · 1 1⁄2 cups chopped pecans (Nothing but ARIZONA PECANS will do)

*CAKE DIRECTIONS

· Preheat oven to 350°F.

· Grease and flour three 9-inch layer pans, line bottoms with parchment paper.

· Melt chocolate in water, cool.

· Cream butter and sugar.

· Beat in egg yolks.

· Stir in vanilla and chocolate.

· Mix flour, soda, and salt.

· Beat in flour mixture, alternately with buttermilk.

· Beat egg whites until stiff peaks form, fold into batter.

· Pour batter into prepared pans

· Bake for 30 minutes or until cake springs back when lightly pressed in the center.

· Cool for 15 minutes; remove and cool on a rack.

*COCONUT-PECAN FROSTING (I doubled this to have enough for between the layers)

· Combine evaporated milk, sugar, slightly beaten egg yolks, butter or margarine, and vanilla in a saucepan.

· Cook and stir over medium heat until thickened. Remove from heat.

· Stir in shredded coconut and chopped (ARIZONA PECANS).

· Cool until thick enough to spread.

· Frost the cooled cake

Looking for something healthy, nutritious, sweet, and filling this spring? Arizona Pecans is excited to share their delightful Spring Strawberry Salad with Chicken and Arizona Pecan Crusted Brie! It's the perfect combination of flavors to enjoy seasonally.

3 Cups- Spring mixed greens
1 Cup- Micro arugula
2 Cups- Strawberries, hulled and quartered
1 Small- Rosemary and garlic rotisserie chicken, skinned and cubed 1 Medium- Jicama, julienned
½ Cup- Red onion, sliced very thin
3- Mini-Cucumber, sliced
3- Green onion, finely chopped
1-5oz container- Feta cheese, crumbled

Arizona Pecan Crusted Brie
- Arizona Pecans, finely chopped, toasted, and seasoned with garlic salt and Italian Seasoning to taste.
-Brie cheese, remove rind, let it rest at room temp for 30 min. Roll into small balls, then roll each cheese ball in cooled pecans to coat, pressing to adhere.

Dressing
4 Tablespoons- Cranberry Pear White Balsamic Vinegar
1 Tablespoon- Avocado Oil
¼ Teaspoon- Cinnamon
½ Tablespoon- Honey
1 Dash- Salt (for my Mother)

Instructions: Gently add the first nine ingredients into a large salad bowl. Whisk dressing Ingredients until completely combined. Toss together and top with Arizona Pecan-crusted brie balls and serve.
