With today's rain we are reminded that the summer season is mostly gone. Thank you to everyone for making our summer a blast. We had such a great time meeting and serving the Whidbey Island community!

Now that things are slowing down we have the chance to catch our breath and get a few things done that we've been putting off. That said, we'll be closing each Tuesday for the next few months. We'll be using this time to make some needed changes, fix a few things, clean things, and well... rest up.

We are also planning to be open on Wednesday, but only with a cold kitchen. That means we'll have bagels and smears and cold sandwiches, but our grill will be off.

We are really excited about the projects we have lined up and think you are going to love the results. See you all soon!

"You're out of [insert your favorite bagel flavor here]!?!?!"

We hear that quite a bit. If we have disappointed you we express our sincere apology. We wish we could have all flavors at all times of the day, but that is very sadly not currently possible.

Our ovens produce bagels quickly, but there are times of the day when our customers are purchasing faster than our ovens can bake -- leaving us with some temporary gaps in our inventory and/or very hot bagels (which we do NOT recommend cutting into until they are fully cooled). We do our best to restock as quickly as possible.

We also don't bake right up to closing. Our bakers start the day at 4AM -- they prepare all of our flavors for our 7AM opening. They continue to bake until noon. Some days we have a second shift of bakers that work on our wholesale orders. They can sometimes prepare bagels for our retail customers and will bake as late as 2PM.

We also have a limited amount of storage for our uncooked bagels. So, there are days when we exhaust a flavor from our inventory. Unfortunately, it takes a good deal of time to create the dough for all of our tasty flavors. The dough we make today, won't be ready for baking for many many hours -- which is typically the next day.

We start each day with fresh bagels. We do our best to "Keep 'em comin'!" When we don't have your favorite, we hope you'll try another and ... who knows? Maybe you'll find you have many favorites!

The Big Island is here! Slow roasted mojo pork. Garlic-lime aioli, jalapenos, cilantro, and romaine. People have been very pleased they tried it!
