LA BECCAFICO ACCOMPAGNA LA PASTA 🇮🇹
The idea was simple:
What if a pasta could capture the flavors of the traditional Catanese Beccafico?
Not copy it. Not change it.
Just take those unmistakable Sicilian flavors and let them tell a different story.
And that’s how this dish was born.
Fettuccine with sea bass sautéed with garlic and extra virgin olive oil, finished with the natural broth from fresh clams. On top, a crispy sea bass fillet inspired by the Catanese Beccafico, with mollica atturrata, pine nuts, raisins and orange zest.
The sea, Sicily, and one of the flavors I grew up with — all on the same plate.
We know it’s a little risky…
but we just had to do it. 😂

TONIGHT AT SOUL

**Paccheri al Grassato Siciliano**

Some recipes are more than recipes. They are memories.

This is one of them — a dish I remember from my mother’s kitchen in Sicily: beef slowly braised for hours with onions and potatoes, until everything comes together into a rich, silky sauce made naturally from the meat and its own juices.

Tonight, that memory is on our table at Soul.

And it’s also part of my cookbook, ***The Flavors of My Life*** — because this book was created to preserve the flavors, traditions and stories that shaped the way I cook today.

Slow-braised beef • caramelized onions • potatoes • rich natural jus

**Available tonight at Soul Sicilian Fusion.**

From my mother’s kitchen in Sicily, to my cookbook, to your table.
