Meet Zach Brown, the new General Manager at Pastaria 👋
If Zach looks familiar, that’s because he’s been part of the Niche Food Group family for years—previously leading the teams at Bowood by Niche and Expat BBQ before making his way to Pastaria. We’re so excited to officially welcome him to the team!
What’s something you’re most excited about bringing to Pastaria as the new GM?
Pastaria is a staple in the STL dining scene, and, to be frank, a beast of an operation. That’s all very exciting to me. I love a big project that brings people together, and I love Italian food, wine, and culture. Visiting Pompeii was a defining moment in my understanding & appreciation for the value of good food to people throughout time, so this feels like a great chance to dive into my love for what the kitchen & dining room can do for people today.
What’s your go-to order at Pastaria right now?
Right now I’m all about the lamb. We’ve brought back a classic recently, the Angry Lamb Bucatini Rigate, which is just an unctious lamb ragu with ricotta on top of these giant bucatini noodles, and it all comes together so richly, it’s gorgeous! That with a glass of Montalcino for the touch of spice, and I’m a happy man.
What’s a hill you’ll die on when it comes to hospitality?
If it’s possible, do it! If our guests want something that might be new to us, let’s try it out and see what happens! Who knows, it could be a flavor combination or operational suggestion that turns out to be a hit! I really believe in saying Yes to our guests as much as possible, since they’re who we’re doing this all for!
