This is the hardest post we’ve ever had to write.

What began as a small husband-and-wife dream on four wheels — just the two of us serving loaded potatoes from our food truck — grew into something bigger than we ever imagined. Because of your support, we were able to open our brick-and-mortar store. That was one of the proudest moments of our lives.

When the storefront chapter came to a close, we weren’t ready to give up. We talked about going back to where it all began — the food truck — hoping we could keep the dream alive just a little longer. But after many long conversations, prayers, and sleepless nights, we’ve made the heartbreaking decision to discontinue it all.

This is not the ending we hoped for.

To our regulars — from the early truck days, to the store opening, and every day after — you’ve been more than customers. You’ve been our community. You stood in line in the heat and cold. You brought friends. You ordered “the usual.” You celebrated our wins and carried us through the hard days. You allowed a husband and wife team to chase something together, and that is not lost on us.

You made this dream possible.

We poured everything we had into The Potato Bin — our time, our savings, and our whole hearts. While it’s incredibly hard to close this chapter, we are deeply grateful and incredibly proud of what we built, even if it didn’t last as long as we hoped.

Thank you for every loaded potato ordered, every social media share, every recommendation, and every “We’ll see ya next week.”

With that said, the food truck is officially for sale. While it’s bittersweet to let it go, we truly hope it finds new life — serving food, building community, and helping someone else chase their dream, just like it helped us start ours.

Did You Know that the potato was the first vegetable grown in space:?

On a mission that launched in October 1995, the potato became the first vegetable to be grown in space. A collaboration between NASA and the University of Wisconsin-Madison sent potato seed cuttings, or "Quantum Tubers," aboard the Space Shuttle Columbia. The goal was to develop a food source for future space colonists.

After much consideration, we have made the difficult decision not to reopen as planned.

The past year has brought many challenges and changes, and we believe it’s important to take a step back, regroup, and carefully plan the next chapter for our business and community.

Over the coming months, we’ll be taking time to find the right new home — a place that truly reflects our vision and feels like the perfect fit for our extended family of guests and supporters.

We are deeply grateful for the outpouring of love, encouragement, and understanding we’ve received. Your messages and support mean more than words can express, and they inspire us to return even stronger.

If you become aware of a potential location that might suit our needs, we’d appreciate it if you reached out to us directly with details.

In the meantime, please watch for updates on our food truck locations and upcoming pop-up events — we look forward to continuing to serve you.

Did you know today is Jim Henson's birthday?
Henson was an American puppeteer, animator, actor, and filmmaker who achieved worldwide notability as the creator of the Muppets.

One of our favorites was The Swedish Chef. A parody of television chefs, the Swedish Chef wears a toque blanche, has a thick brown moustache and has bushy eyebrows that completely obscure his eyes. He was one of the few Muppets to employ an actual puppeteer's visible hands.
