Ingredients:
Secret Umami Paste: 3.5 oz Beef liver (soaked in milk or water for 30 mins, then drained)4 to 5 Anchovy fillets in oil ¼ cup Nutritional yeast ¼ cup Beef broth
Fresh Produce & Aromatics:
5 lbs Fresh whole tomatoes (Roma or Beefsteak), blanched, peeled, and chopped, 3 medium yellow onions (finely diced), 9 cloves garlic (minced) 2 large fresh jalapeño peppers, (finely diced), 2 tablespoons avocado oil or animal fat
Spices & Flavor Anchors:
1 cup High-quality chili powder, ¼ cup (4 tablespoons) ground cumin, ¼ cup (4 tablespoons) Smoked paprika, 2 tablespoons dry mustard powder, 2 tablespoons dried Mexican oregano, 1 tablespoon ground turmeric, 1 tablespoon ground black pepper
Liquids & Finishes:
1 bottle (12 oz) B**r (amber, red, or any dark b**r),1 double shot (2 oz) Strong espresso, 2 to 3 cups Low-sodium beef bone broth (adjust based on thickness), ¼ cup pickle juice, salt to taste
Step-by-Step Instructions:
1. Blanch the tomatoes. Bring a large pot of water to a boil. Core then score an "X" on the bottom of each fresh tomato. Drop them into boiling water for ~60 seconds until skins split. Transfer immediately to ice water. Peel off the skins and set aside.
2. Blend the secret paste. Add the beef liver, anchovies, nutritional yeast, and ¼ cup of beef broth into a food processor or blender. Blend until it forms a completely smooth, liquid paste. Set aside.
3. Brown the beef in a large, heavy stockpot over medium-high heat. Add the 5 pounds of ground beef in batches. Cook until well-browned, breaking it up with a spoon. Drain off excess grease.
4. Cook aromatics & secret paste: Heat the oil or fat over. low heat then sauté the onions until well caramelized (45-60 minutes). Then add garlic, and fresh jalapeños. Sauté for 5 minutes until soft. Pour your Secret Umami Paste directly onto the hot bottom of the pot. Stir it completely into vegetables, cooking for 3–4 minutes to deeply sear the liver and anchor the umami flavors.
5. Bloom the spice blend: Sprinkle the chili powder, cumin, smoked paprika, mustard powder, oregano, turmeric, and black pepper over the browned meat. Stir continuously for 1 to 2 minutes. Toasting the turmeric, mustard, and pepper in the hot beef fat eliminates any raw, dusty flavor and unlocks their aromatic warmth.
6. Deglaze and simmer: Pour in the 12 oz b**r and the double shot of espresso, scrape up all the caramelized spices stuck to the bottom of the pot. Let it bubble for 2 minutes to burn off the raw alcohol. Deglaze the pan with the onions and garlic with some of the bone broth then add to the pot with the meat. Stir in your blanched tomatoes and 2 cups of beef bone broth. Bring to a boil, then reduce heat to low. Cover loosely and simmer for at least 3 hours, stirring occasionally. (If the doubled spices absorb too much liquid, stir in the remaining cup of broth).
7. The pickle juice finish: Stir in the ¼ cup of pickle juice. Let the chili rest for 10 minutes. Taste the chili before adding any extra salt.
