Maria's Packaged Goods & Community Bar used to run a Monday night special for its patrons during the Summer months. This Ko Po BBQ (Korean Polish Barbecue) centered around the perfect marriage of Polish sausages and krautchi (kimchi+sauerkraut). The series was a smash success and it was obvious that Maria's and Chef Won needed to collaborate more in depth and explore the idea of what Ko Po can truly be. The upcoming Kimski's will offer Korean Polish street food.

Our next Polish of the month comes in from chef from who has been long time friends with us and is always down to lend a helping hand in anything we do for the community. We strive to be like Perilla when we grow up one day. They also have Wiener Wars every Monday in the summer on the Perilla patio so we know he’s all in for dressing up a Polish: a ripper Polish (deep fried), dunked in a gochujang glaze, topped with sour kimchi, mustard, perilla and a lot of scallions in our fresh baked brioche bun. It’s great remix and can’t wait to serve it all month!

We are kicking off our TENTH year in service with a Polish sausage of the month featuring friends we love, respect and appreciate. We would’ve be where we are today without the help and friendship that from has provided over the years. Dude was in the trenches with us breaking up rice after service almost every night the first year. It’s only right we inaugurate this special with his pineapple kimchi, bulgogi mustard on fresh baked brioche, with a lot of scallions. Served with a side of fries, this beauty’s flavor lasts!

Here it is. Your official invite to celebrate our TENTH YEAR! We are going big this year with some of our favorite places to eat. We have friends from Chicago, NOLA, Indianapolis and St Louis. We also have some of the best DJs providing tunes throughout the day. It hasn’t been an easy journey but it was worth every minute to get to this point. It’s on for 12 hours this year so we hope you can swing by at some point to eat from places like and a few other surprises. Music from Phantom 45, and - plus a special hot sauce made by a limited edition tee and other tings - this is a big deal for us so we hope you can join us at some point in our marathon 12 hour party. Last night was one for the books! It was the most we have ever raised with soup! 7300 dollars!!! For Holden Elementary and PMI. So many amazing people involved to make the humblest of foods just to help others. Nothing political, nothing religious, just good vibes, happy bellies, and another all star roster of chefs, volunteers, and attendees. Thank you to: .chicago .table for the amazing bread donation, for the tubes all night, Lisa, Bobby, Matt, Tim, Sarah, for allll the help, for the space and for the support. It was a special night!

residency is going swimmingly so far! One month down and two full months of deliciousness ahead. You guys all already know about their amazing cheesesteak sandos, however there are more awesome items to try out! Kimcheese fries, the McMorgan, double cooked brined wings, pierogis with home made apple sauce and other items on the menu. Come try out some of the specials about to happen as opens up his bag of tricks especially as Hot Tropics is about to start - winter can be delicious and fun!

WE HAVE IMPORTANT NEWS! will be taking over January-March again the beginning of 2026. This means awesome cheesesteak sandwiches, popups, specials, and specials for the first quarter. This isn’t a goodbye but more of a break while helps and resets to hit the ground running FOR OUR UPCOMING TENTH YEAR!!!!! We will have a lot of surprises, parties, surprise guests and most importantly, great food. Thank you everyone for always supporting us through the thick and thin. You have ONE MONTH TO TRY OUT OUR WINTER MENU and then it’s at the helm from January-March 2026.
