Growing up in the U.S., my relationship with food is quite colorful. At home, Chinese-Cambodian dishes are the staple. But in this melting pot, flavors from different backgrounds of our neighbors are also celebrated. At Hermosa, one of our mission is to be seasonal with our environment guiding us, and winter in the Midwest is slightly different than Cambodia. We must bundle up more than relatives back in Kampong Thom. And as the temperatures drop below freezing, we especially love hearty ‘Merican dishes that pad our bellies.

So, for Winter 2026, we present to you our new Khmerican Supper Club menu, a delicious ode to the beloved Wisconsin supper club, served with a Khmer twist. Beginning with the quintessential opener.

Plus the cutest Deviled Quail Eggs, enhanced with caviar and kroeung.

Developing this menu was a lot of fun. We come from a generation of immigrants believing in the American dream; work hard in a free-market system is the path to success. Because food is thought to be a universal language, deciding what to serve was challenging. How to deliver tradition while authentic ingredients were unavailable? Eventually we realized in this landscape of red, white & blue, painting with every available color is welcomed. Our culinary cornucopia is to be celebrated, not deported.
Cross-cultural marriages have cooked up a golden era in food & hospitality. Despite the revolving door of Bovino and his ICE hooligans, I choose to serve up edible stories of art & culture. Those of us from the Khmer Diaspora know all too well how it feels when this privilege is lost. We cannot let it happen here. So yeah, come join us at dinner. Lose yourself in time with flavors both familiar and foreign. Let’s communicate in a common tongue.
