New Dish Alert: Shrimp Aguachile de Tamarindo

Aguachile, “chile water,” comes from Sinaloa on Mexico’s Pacific coast. Raw shrimp is traditionally “cooked” in lime juice and fresh chiles right before it’s served, like a punchier cousin of ceviche.

Ours takes it somewhere new: white shrimp in a tamarind and ancho aguachile, finished with charred allium. Sweet, sour, smoky and bright.

Birria for Día de los Mu***os: A dinner special this weekend only, Saturday and Sunday at 4PM until Sold Out.

Braised beef, cooked low and slow overnight in an adobo of chile ancho, chile pasilla and warm spices. Served with the consommé for dipping, house-pickled white onions, onion and cilantro, guacamole, limes and tortillas.

Makes 5 to 6 tacos per platter. Bring someone to share it with.

New Brunch Burrito alert: the Green Chorizo Breakfast Burrito.

Chorizo verde is the green cousin of the red chorizo you know. The color comes from herbs and chiles (cilantro, tomatillo, poblano and serrano) ground straight into the pork. No dye. Fresher and herbier than red. Less smoke, more punch.

We wrap it up with scrambled eggs, potatoes, avocado and melted cheese, toast it on the flat top, and send it out with salsa roja on the side.

The green chorizo is made by our friends at Santa Masa.
