Before “minimalist” was a personality trait, there was Gilroy.

His work didn’t need a caption, and it certainly didn’t need to explain the joke. Whether it was a balancing sea lion or a thirsty toucan, Gilroy’s art captured the Guinness DNA: bold, slightly surreal, and timelessly confident.

We’re keeping that same spirit alive today in the West Loop. No clichés, just world-class brewing and a nod to the icons who got us here.
