THANK YOU for the outpouring of support this week! Yesterday was one of our busiest days ever, and I want to thank our customers, our staff, and our manager Sarina for making it smooth. As many of you heard, I’m moving to Los Angeles in November. I’ve been talking with the employees at Fancy Plants about this since March. Our landlord is awesome, and we’ve been talking for a while too. I love that neighbors from East Lakeview have given us flowers, expressed deep gratitude for the character we bring to the area, and also express loss that the eccentric, q***r, ‘alternative’ cafe in the neighborhood may disappear.
We are exploring options for a vegan coffee shop to stay at 613 Briar!
It’s the staff that makes Fancy Plants Cafe what it is. I play coach, do legal paperwork stuff, and pay taxes. They literally do everything else; from the schedules, to the inventory, ordering, hiring, training, bakery specials, drink creation, opening, closing, cleaning.... you get the idea.
Yes, I deep cleaned the cafe with the staff last week, and made a Peaches & Cream drink. I opened the place with a Kickstarter for $20k, and pretty much lived at the cafe for a few years. But I’m more of a chef, less of a business person. I enjoy business now, but I would much rather focus on being a vegan chef, and blowing that spark into a 🔥
We’ve been so busy, and I am extremely proud of how our staff is handling it.
The 5-course dinners that Paula, Amethyst, Alex, and I are hosting are keeping me busy, and sold out much faster this week.
Thank You so much Chicago, thank the Fancy Plants staff when you see them, thank Sarina for making these croissants look extra nice, thank Diane Mejia/Mindful Baking and Diane for making gluten-free muffins for us for 7 years, thank Misericordia Hearts & Flour Bakery and Cafe for recently taking on our croissant pre-production, thank Big Shoulders Coffee for providing us with amazing beans, and even thank Tiago Pappas and Chicago Apartment Place for being awesome building managers and taking a chance on helping us open the first vegan coffeeshop in the midwest.
I’m really in love with Chicago, but also ready for the next chapter.
