Hey campers after years of gouging from the family I am working on a collective cookbook of family recipes . So far 39 pages that of course need edited and review before publishing . Hope to include family history and pics and stories . Last year we had a pilgrimage of sorts to Montecalvo Irpina to see where some of our family was from and meet relatives . So much fun and great history.
Anyway a work in progress. Would love to here your feed back

So we here at Frank and sons are working on removing all seed oils and nasty additives from our dishes here is a mayo recipe that is lots of fun and healthy believe it or not .

Mayo for emersione blender
1 cup mct or olive or avocado
1 whole egg
1/2 tablespoon lemon juice
1/4 teaspoons Dijon
1/4 teaspoon of sea salt
1 tsp white wine vinegar
Add all ingredients in container that fits you emersion blender but add oil last and allow to sit for about 1 minute then insert wand completely to the bottom and begin mixing as it emulsifies begin to raise mixer to to incorporate all ingredients, this is a quick process don’t take to far .
Now have fun with this add dry mustard and honey or garlic olive oils or use 3 parts mct and one part olive or avocado.

Asparagi e crema allo zafferano
Asparagus and cream with saffron
1 lb asparagus chopped bite size and cleaned
1/2 cup cream heavy whipping
1/4 cup milk
2 nice shallots chopped / thinly sliced
1/2 stick butter
2-3 tablespoons of extra virgin olive oil
1/4 cup pine nuts
1 tsp of kosher salt
1 tablespoons of anchovy paste or 3 anchovy
1 sachet of saffron powder or pinch of whole saffron
Toast pine nuts in frying pan and set aside for garnish
In a frying pan add oil and shallots to soften, add anchovies to clarify add butter and asparagus to soften for about 5 minutes. Add stalk to sauté. Add cream, milk and saffron siring through for about 5 min . Finish pasta in the sauce.
For pasta I like bucatin
