📌Sweet Potato Guacamole

INGREDIENTS
o 4 cups roasted sweetpotato, mashed
o Flesh of 2 avocados, about 2 cups
o 2 cloves roasted garlic, minced
o 1/2 red onion diced
o 3 green onions, sliced
o 1 1/2 teaspoons black pepper
o 1/4 cup fresh basil leaves, cut into thin strips
o 8 ounces jalapeno goat cheese
o 2 tablespoons lime juice
o Salt to taste
o 1/2 quart cherry tomatoes, halved and roasted

INSTRUCTIONS
1. Blend together mashed sweetpotatoes, avocado, roasted garlic, red onion, green onion and basil.
2. Stir in cherry tomatoes.
3. Add about half the goat cheese and lime juice along with a teaspoon of salt.
4. Taste, adding more goat cheese, lime juice and salt as needed.

NOTES: You can never make enough guacamole. This big-batch recipe serves a crowd, assuming everyone eats only their share, but it’s easy to cut this recipe in half.

📌 Rosemary-Roasted Chicken with Apples and Potatoes

INGREDIENTS:
- Cooking spray
- 2 tablespoons butter
- 1 large onion, sliced
- Salt, plus more to taste
- 4 teaspoons white sugar
- 5 medium apples - peeled, cored, and cut into 1/4-inch slices
- 1 pound Yukon Gold potatoes, cut into 1/4-inch slices
- 2 tablespoons olive oil
- 6 bone-in, skin on chicken thighs
- 2 tablespoons chopped fresh rosemary
- Ground black pepper

INSTRUCTIONS
1. Preheat the oven to 400 degrees F (200 degrees C). Spray the top and bottom parts of a broiler pan with cooking spray.
2. Melt butter in a skillet over medium heat and add onion slices. Sprinkle onions with 1 teaspoon salt and saute for 2 minutes. Add sugar and continue cooking until onions are translucent but not browned, 6 to 8 minutes. Remove from heat.
3. Layer apples, potatoes, and sauteed onion slices in the bottom part of the broiler pan. Cover with the part top of the broiler pan.
4. Drizzle olive oil over chicken thighs. Sprinkle with fresh rosemary, salt, and pepper. Rub olive oil and spices thoroughly all over each thigh and place on the top part of the broiler pan.
5. Roast in the preheated oven until juices run clear and an instant-read thermometer inserted into the thickest part of the thigh, near the bone, reads 165 degrees F (74 degrees C), about 1 hour. Serve apples, potatoes, and onion alongside chicken thighs.

📌Korean Corn Ribs - An easy, fun snack recipe, these Korean corn ribs are well balanced between garlicky, sweet, spicy, and savory. Not only are these tasty, they're also vegan and vegetarian friendly! 🌽

INGREDIENTS
▢ 3 ear sweet yellow corn, shucked
▢ 3 Tablespoon granulated sugar
▢ 1 1/2 Tablespoon gochujang (Korean pepper paste)
▢ 1 1/2 Tablespoon rice vinegar
▢ 3/4 Tablespoon ketchup
▢ 1/2 Tablespoon soy sauce
▢ 1 clove garlic, minced (about 1 tsp)
▢ Green onion, thinly sliced (optional for garnish)
▢ Toasted sesame seed (optional for garnish)

INSTRUCTIONS
1. Preheat oven to 400°F and prepare a sheet pan lined with either parchment or foil.
2. In a small bowl, whisk together sugar, gochujang, rice vinegar, ketchup, soy sauce, and minced garlic. Set aside until needed.
3. ***Before starting, please, please, please be careful of your knife! If you're not comfortable holding a knife, have someone cut the corn for you. Always be aware of where your knife blade and the placement of your fingers. ***
4. On a secure, non-slippery cutting board, split the whole corn into quarters, lengthwise. Arrange the quartered corn on the lined sheet pan with some space in between each one. Bake the corn for about 20 minutes, or until the corn kernels develop some brown and becomes crispy.
5. Brush the corn kernels with the prepared sauce and bake it for another 5 minutes.
6. Garnish the Korean corn ribs with sliced green onions and sesame seeds.
