Three years in a row. Best Indian/Pakistani Restaurant in Charleston.

When the dream of Ma’am Saab first began taking shape over six years ago, it lived in conversations, late nights, uncertainty, sacrifice, and belief. Three years ago, we opened our doors on Meeting Street with the hope that Charleston would give us a chance to share a piece of our story, our culture, and our table.

Today, being recognized once again as Charleston’s Best Indian/Pakistani Restaurant means more to us than we can properly put into words.

This recognition belongs to so many people.

To our team members, past and present, thank you for carrying this dream with us. Restaurants are built on countless unseen acts of care, grit, patience, and selflessness. Long nights. Burned hands. Last-minute saves. Believing in the vision even when the road felt uncertain. Your fingerprints are on every corner of Ma’am Saab.

To our local farmers, suppliers, artists, makers, collaborators, and partners who stood beside us through every challenge and every milestone, thank you for believing in what we were building. Small businesses survive through community, and we have felt that support deeply.

To our families, thank you for the sacrifices, encouragement, understanding, and love that made this possible. None of this exists without you.

And most importantly, to every single guest who has dined with us, celebrated with us, trusted us for date nights, birthdays, anniversaries, comfort meals, and moments big and small: thank you. You gave this dream life.

As immigrants from Pakistan, we came to America with little more than hope, ambition, and the belief that hard work and kindness could create opportunity. We wanted to learn, contribute, build something meaningful, and become part of a community bigger than ourselves. Charleston welcomed us, challenged us, shaped us, and allowed us to grow.

That exchange, that shared belief in one another, is what makes this country so special.

It is a privilege to serve you.

Meet my uncle, Iqbal Gauba. To me, he was always Bali Chacha. Gentle. Kind. The kind of person whose happiness filled the whole table. I miss him every single day…

One day, he took me out toward the Super Highway on the outskirts of Karachi for a chicken karahi tasting. I can still remember the sound of the karahi sizzling, the aroma of toasted spices rising into the air, hot naan tearing apart in our hands, soaking up every bit of that rich sauce.

But more than the food, I remember him.

The joy on his face after that first bite. The pride he felt sharing something he loved with me. A moment so simple, yet unforgettable.

Years later, that memory still lives inside this dish.

This Chicken Karahi is dedicated to you, Bali Chacha. I miss you deeply.

And now, we’d love to share this experience with you at Ma’am Saab. Come pull up a chair. Tear some naan. Make a memory with someone you love.

Charleston knows a thing or two about gathering around food that took its sweet time.

So this one matters to us.

Our Lucknow Nihari starts the long way: whole spices toasted until the room changes, ground fresh in-house, lamb shanks cooking for 16 hours until the broth turns silky and deeply alive. No premade mixes. No rushing the process just because it’s easier. We chased this dish until it felt right.

Nihari has history behind it. Royal kitchens. Late nights. Slow mornings. Hands passing recipes forward instead of hiding them away. And somewhere between Lucknow and the Lowcountry, it found a home at Ma’am Saab.

Charleston has always understood that the best meals aren’t just eaten. They pull people closer. They stretch conversations longer than expected. They make strangers sound like old friends by dessert.

That spirit feels familiar to us.

This is our version. Respectfully traditional. Slightly dangerous. Deeply Ma’am Saab.

Introducing the Lucknow Nihari. Born in the royal kitchens of Awadh, this dish was never meant to be rushed. It was meant to be waited for. Deep patience. Layers of spice unfolding over time.

We start the same way they did... Whole spices. Toasted until fragrant. Ground fresh in-house. No shortcuts. Our lamb shank cooks low and slow for 16 hours, transforming into something impossibly tender, wrapped in a silky, deeply spiced gravy that leans aromatic over aggressive heat.

And then comes the final touch: Chili Nihari oil. The crown. The moment. The thing that takes it from tradition… to obsession.
