A couple of years ago, thanks to Darin Fisher Designer Kitchens and Gritt's Farm I was able to make what I called Saving Thyme @ Home videos. On these videos I made several recipes. One of which is one of my most popular items, Chicken Salad! Seems like a simple thing, but when it’s right, it’s so good.

I talked to someone recently that said she watched my videos and still makes my chicken salad all the time. I was pleasantly surprised because I wasn’t sure if anyone even watched them, lol.

These videos were so fun to do, but I had to do it all from prepping the food, to recording it, editing it and a bunch of other little things in between. It was so time consuming I couldn’t continue, but I miss it. It’s totally out of my nature to be in front of the camera, but when I can talk about what I love most, I guess it’s a little easier, lol.

Anyway, I thought I might do a little throwback and repost this chicken salad video.

The recipe starts with chicken that had been up and put in the Instapot, covered with water, then pressure cooked for 4-5 minutes depending on how much your making. I also let it naturally release and that takes another 20 minutes or so. This shredded chicken is good for so many things! Season it up and make chicken tacos, use it for a chicken casserole or make some chicken salad…❤️

Some of Roman and Veda pics from May. I was so slow to get with Lisa Jennings Photography, but finally did so now I can show them off.
These were taken in Department of Records area of Vintage and Vines Mercantile. It was a great place for pics because Roman and Veda love shopping vintage items, but there are so many areas and great backdrop potential!

I had a pickup order yesterday morning and a party last night and was the one of the hardest days I’ve ever had. It was also the day Roman and Veda left for Columbus. It’s weird to be excited for them but my heart also hurts so bad. I want experience for them and love seeing them start this part of their lives, but watching him leave and knowing he wouldn’t be home last night was tough. Actually I was half asleep last night and Jon made a noise, for a second I thought it was Roman coming home, then I remembered he wasn’t.

I want nothing but happiness and success for them! They have worked hard and deserve it! Good luck Roman and Veda! You’re off to a great start. I love you both!
