We just found out that this weekend is the Charlemont town wide tag sale! Just another reason to make the drive!

Wells Provisions will be open Saturday and Sunday from 10am to 2pm and our sweet vintage store utilizing the back portion of our store Wares & Wears at Wells Provisions will also be open.

Collard Melt, Shrimp and Grits, and OG Chicken Sammy will be on the menu in addition to other favorites.

It’s the time of year that we are lucky enough to get our collards locally from Dan Good Bunch Farm

Here he is holding the 20 bunches of collards he just picked for us. These are destined for our COLLARD MELT this weekend. This sandwich is a much requested favorite - it’s vegetarian, but meat lovers adore it too.

Slow cooked tangy collards, layered with creamy cole slaw, melty provolone cheese, and our version of a thousand island, all on griddled rye.

Open this Saturday and Sunday 10am to 2pm.

On the menu from day 1 - our Shrimp and Grits. There are many variations (from low country to Caribbean) but ours is truly NOLA style - made with a sauce that begs you to lap it up! It’s New Orleans Barbeque, yet has no relation to what we all think of as BBQ. The term comes from how the shrimp was originally cooked for this dish at the place that invented NOLA BBQ (Pascales Manale’s - the shrimp was cooked on the BBQ or grill).

The sauce is a combination of Worcestershire, Louisiana style hot sauce (Crystal in our case), lemon, rosemary, peppercorns, amber beer, heavy cream and a bit of butter. It’s the perfect pairing to wild caught Gulf shrimp and stone ground grits!

If you’re the person who called our OG Chicken Sammy “life changing” raise your hand 🙋 That’s a bold statement that was handed over to us at the last pop-up. Life changing or not, it’s no accident that this sandwich hits all the check boxes of flavor and texture.

We’ve been tweaking this sandwich for years now, trying for that perfect bite and think we’ve finally achieved it.

It’s savory, it’s a tad sweet, it’s creamy, it’s crunchy, it’s hot, it’s tangy, it’s rad.

Pickle/buttermilk brined chicken thigh, double battered with our seasoned panko, fried deep brown and topped with our Louisiana hot-sauce-maple-mayo sauce, served on a soft griddled bun with a crispy cheddar lace, pimento cheese, pickles and shredded lettuce. We make it all in house, because the little details matter.

If you took part in our fun little “guess how many cups of veggies are in the gumbo pot” contest yesterday, you’ll know that there are 93 cups of vegetables per batch of our gumbo. That’s almost 24 quarts of bell peppers, onions, celery, okra and garlic in our 60 quart pot. Those 24 quarts of veggies along with 15 pounds of andouille and 30 pounds of chicken yield around 40 quarts of gumbo. So you should feel good about eating our gumbo, it’s practically health food 😜!
