✨ Happy Winter Solstice ✨

Last night we greeted the longest night of the year—a sacred turning point.
Where darkness does not mean defeat, but incubation.
Where stillness gathers strength.
Where light is quietly, inevitably born.

The solstice reminds us that even in the deepest cold, the promise of warmth is already on its way. Roots deepen. Dreams ferment. What has been tended in silence begins its slow return toward the sun.

We raise a glass to reflection, resilience, and the invincible spirit that finds the sun—even in winter. May this season bring you rest, clarity, and the quiet confidence that brighter days are unfolding.

Cheers to Uncle Sam! 🇺🇸

We’re officially licensed by the Alcohol and To***co Tax and Trade Bureau to produce alcohol! After months of paperwork and patience, we’re thrilled to announce that Northwest Territory Cider Co. has cleared a major milestone on our path to launch.

Next stop, state licensing, then bottling Ohio history one wild apple at a time. Stay tuned— it’s almost time to pour!

The Northwest Territory Cider Co. crew—Zach, Allison & Rhys—just wrapped up an incredible few days at CiderCon! Three packed days of educational tastings, workshops, and classes, plus plenty of great cider shared with fellow makers and friends. 🍻💡
We left feeling inspired, full of new ideas, and even more excited for our Summer 2026 launch. Huge thanks to the American Cider Association for organizing such an amazing event!

It’s been a while since we’ve shared on social, but much work has been going on behind the scenes to get Northwest Territory up and running! We’re happy to share an update of what 2024 has looked like so far, and should have some fun news to share this fall winter as well!

We started the year off strong with our third visit to this time in Portland, Oregon. This is always such a great conference full of information that has helped set us up for success.

We’re also proud to announce that Zach has completed his course on Cider & Perry production with the Cider Institute of North America, and is now a certified Cider Maker!

In the early spring we got the keys to our brand new production space on Chagrin Rd. in Bainbridge, and have steadily been acquiring the equipment we need to turn the space into a fully functioning fermentation facility, including a large walk in cooler and 8 fermenting tanks. We’re soon to be adding brite tanks as well. This space is perfect for us, with offices in the front and a small area for sampling cider, two garage entrances, a dock and a crane for great ventilation and easy juice deliveries.

And finally, those of you local to Auburn have probably noticed some changes happening to the orchard house! Renovations are steadily underway, and we hope to have our family moved into our new home by the holidays, allowing us to tend our apple trees daily, and focus more of our time on opening our seasonal outdoor bar, and getting our cider on the market.

What is traditional cider? Its cider made from heirloom varieties with flavors you dont find in your average grocery store apple. Bitter, sharp, tannic, tart, floral, or sweet - these apples have proven for centuries that they make great cider.

And while we love a good you probaby wont find pumpkin-spiced cider on our shelf. We believe apples are all you need to make a quaffable, food friendly glass of cider, though you may find us playing around with fruits and herbs like ginger, cranberry or cherry - flavors that have been used to make special styles of cider for years.

What happens when two alums move back to Ohio to start craft beverage brands? A fun colab of course!

We went down to Tuscarawas county yesterday to visit the apple orchard at the beautiful farm of - if you haven’t tried their delicious canned cocktails yet run to the nearest ASAP!

We’re so excited to use some of their fruit in this year’s batch of cider, and hopefully for years to come!
